Ingredients

Pasta

  • 14 ounces dried linguine pasta

Sauce

  • 3 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons minced shallots
  • 2 teaspoons chili flakes
  • 1 clove garlic, minced
  • 2 (4-ounce) cans boneless sardine fillets, drained
  • 1 lemon, zested and juiced
  • 1 tablespoon flat-leaf parsley, chopped
  • 2 tablespoons baby kale

Instructions

  1. Gather Ingredients: Collect all the ingredients listed to ensure a smooth cooking process without interruptions.
  2. Cook the Pasta: Boil linguine in salted water according to package instructions until al dente. Drain the pasta, reserving 2 tablespoons of the cooking water to add moisture later.
  3. Toss Pasta: Return the drained pasta to the pot or pan used for cooking, add reserved cooking water and 1 tablespoon of olive oil, and toss to coat the pasta evenly. Keep it warm while preparing the sauce.
  4. Prepare the Sauce: Heat the remaining 2 tablespoons of olive oil in a large heavy-bottomed frying pan over medium-high heat until hot but not smoking.
  5. Sauté Shallots: Add the minced shallots to the hot oil and cook for 1 minute until fragrant and translucent.
  6. Add Chili Flakes: Stir in the chili flakes to infuse the oil and shallots with a spicy kick.
  7. Cook Garlic: Reduce heat to medium and add minced garlic. Stir continuously for 1 minute being careful not to burn it, as burned garlic would add bitterness.
  8. Add Sardines and Lemon Zest: Gently add drained sardine fillets to the pan, stirring carefully to keep pieces intact. Mix in lemon zest to brighten the flavors.
  9. Combine Pasta and Sauce: Transfer the cooked linguine to a serving bowl. Stir in the sardine sauce, chopped parsley, and baby kale, allowing the residual heat to slightly wilt the greens.
  10. Season and Serve: Season with salt and pepper to taste, drizzle with fresh lemon juice, and serve immediately for a fresh, zesty finish.

Notes

  • Reserve some pasta cooking water to adjust sauce consistency and help the sauce cling to the pasta.
  • Be careful not to burn garlic; cook it on medium heat for best flavor without bitterness.
  • Gently fold sardines to maintain texture and avoid breaking them into mush.
  • The baby kale wilts with the heat of the pasta, so no need to cook it separately.
  • Adjust chili flakes to your preferred spice level.
