These protein waffles are a quick and nutritious breakfast option that combines protein powder with simple pantry ingredients to create light, crispy waffles. Perfectly customizable with different flours and sweeteners, they are easy to prepare and ideal for a healthy start to your day.

Ingredients

Dry Ingredients

  • 1/3 cup protein powder (32g)
  • 1/4 cup flour (35g) - spelt, white, or gluten-free all-purpose recommended
  • 1 tsp baking powder
  • 1/8 tsp salt

Wet Ingredients

  • 1/2 cup water (adjust as needed)
  • 1/4 cup egg whites (or additional water as substitute)
  • 1/4 cup yogurt (or applesauce as substitute)
  • 2 tbsp sweetener of choice (e.g., sugar, honey, maple syrup)
  • 2 tsp oil (optional, for crispier waffles)

Instructions

  1. Prepare dry ingredients: In a medium bowl, whisk together the protein powder, flour, baking powder, and salt until well combined to ensure even distribution of leavening and seasoning.
  2. Add wet ingredients: Stir in the water, egg whites, yogurt, and sweetener to the dry mixture. Adjust the liquid by adding a tablespoon at a time if the batter is too thick, aiming for a consistency typical of pancake or waffle batter. Optionally, add oil for crispier waffles.
  3. Preheat waffle iron: Preheat your waffle iron according to the manufacturer’s instructions. Ensure it reaches the recommended temperature to cook the waffles evenly and achieve a light crispy texture.
  4. Grease waffle iron: Grease the waffle iron thoroughly with oil or non-stick spray to prevent the batter from sticking during cooking.
  5. Cook waffles: Pour batter into the center of the preheated waffle iron, ensuring not to overfill. Close the lid and cook according to the waffle maker’s directions until the waffle is light golden brown and crispy.
  6. Serve and repeat: Carefully remove the cooked waffle, re-grease the iron before making subsequent waffles to avoid sticking, and serve warm with your favorite toppings.

Notes

  • Spelt flour, white flour, or gluten-free all-purpose flour brands are recommended; almond or coconut flour results may vary.
  • If using liquid sweeteners like honey or maple syrup, reduce the water content by 2 tablespoons to maintain batter consistency.
  • The addition of oil is optional but helps achieve a crispier waffle exterior.
  • Adjust liquid quantity based on protein powder type to achieve ideal batter thickness.
  • Ensure the waffle iron is properly greased and preheated for best results.
