This protein cake recipe is a delicious, low-carb treat perfect for those looking to increase their protein intake while enjoying a moist and flavorful dessert. Made with protein powder, coconut flour, and a natural sweetener, this cake is easy to prepare and baked to perfection with a tender crumb and lightly golden top.

Ingredients

Dry Ingredients

  • 3/4 cup protein powder (unflavored whey protein recommended)
  • 1/3 cup coconut flour
  • 1/3 to 1/2 cup powdered sweetener (adjust based on sweetness preference)
  • 2 teaspoons baking powder
  • 1 pinch salt

Wet Ingredients

  • 3 large eggs (at room temperature)
  • 1/2 cup butter (melted and cooled)
  • 1/2 cup milk of choice (any type, at room temperature)
  • 1 teaspoon vanilla bean paste

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 320 °F (160 °C). Line an 8-inch round cake pan with a disc of parchment paper on the bottom and a strip of parchment around the sides. Lightly grease the parchment with butter or oil spray to ensure easy release.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the protein powder, coconut flour, powdered sweetener, baking powder, and a pinch of salt. Whisk or stir until all dry ingredients are thoroughly incorporated.
  3. Add Wet Ingredients: Make a well in the center of the dry ingredients. Add the eggs, melted butter (ensure it’s not hot), milk, and vanilla bean paste into the well.
  4. Combine Batter: Using a spoon or spatula, start mixing the wet ingredients from the center, gradually incorporating the dry ingredients from the sides. If using a hand mixer, mix gently and remember to scrape down the sides multiple times to ensure an even, lump-free batter.
  5. Bake the Cake: Pour the batter into the prepared pan and smooth the top evenly. Bake in the preheated oven at 320 °F (160 °C) for about 30 minutes, or until the top turns golden and springs back when lightly pressed. A toothpick inserted in the center should come out clean.

Notes

  • Ensure all wet ingredients are at room temperature to promote even mixing and better texture.
  • You can adjust the powdered sweetener quantity to suit your desired sweetness level.
  • Any milk type can be used including dairy, almond, soy, or oat milk based on preference and dietary needs.
  • Line the pan with parchment to prevent sticking and to facilitate easy cake removal.
  • Allow the cake to cool fully before removing from the pan and slicing for the best texture.
