This Plant Based Granola recipe offers a wholesome, crunchy, and naturally sweetened breakfast or snack option. Made with oats, optional cashew pieces, and gently sweetened with maple syrup and brown sugar, this granola is baked to golden perfection with warming cinnamon and a hint of vanilla. It’s perfect for pairing with dairy-free yogurt, oat milk, or just enjoyed on its own.

Ingredients

Dry Ingredients

  • 2 cups oats
  • 1/2 cup raw cashew pieces (optional)
  • 3 Tbsp light brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt

Wet Ingredients

  • 2 Tbsp coconut oil (melted)
  • 2 Tbsp maple syrup (or agave syrup)
  • 1 tsp vanilla bean paste

Instructions

  1. Preheat Oven: Preheat your oven to 280°F (140°C) to ensure it reaches the perfect low temperature for slow baking your granola.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, raw cashew pieces if using, light brown sugar, cinnamon, and salt. Stir well to distribute all ingredients evenly.
  3. Prepare Wet Mixture: In a separate small bowl, whisk together the melted coconut oil, maple syrup (or agave), and vanilla bean paste until thoroughly combined.
  4. Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients and stir thoroughly until all oats and nuts are coated evenly.
  5. Spread on Baking Sheet: Evenly spread the granola mixture over a baking pan lined with parchment paper or a lightly greased baking sheet to promote even baking.
  6. Bake Granola: Place the baking pan in the oven and bake at 280°F for 25-30 minutes. Every 10 minutes, remove the pan carefully and stir the granola to ensure it toasts evenly and prevents burning.
  7. Cool and Serve: Let the granola cool completely on the pan to allow it to crisp up. Once cooled, enjoy it with dairy-free yogurt, a splash of oat milk, or simply eat it by itself for a nutritious snack.

Notes

  • For added texture and flavor, consider including other nuts or seeds like almonds, pumpkin seeds, or sunflower seeds.
  • Store cooled granola in an airtight container at room temperature for up to two weeks.
  • Using a low baking temperature ensures gentle toasting without burning, preserving the delicate flavors.
  • If you prefer a sweeter granola, you can increase the maple syrup or brown sugar slightly but be cautious of burning.
  • This recipe is vegan and naturally gluten-free if certified gluten-free oats are used.
