A delicious and elegant Pistachio-Crusted Salmon recipe featuring tender baked salmon fillets topped with a flavorful pistachio crust and a tangy honey-lemon marinade, perfect for a nutritious and quick dinner.

Ingredients

Salmon

  • 2 salmon fillets (approximately 6 ounces / 175 grams each)
  • Salt and pepper, to taste

Marinade and Topping

  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1/3 cup pistachios, coarsely chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it's at the perfect temperature to bake the salmon evenly and lock in moisture.
  2. Prepare Salmon: Rinse the salmon fillets under cold water, then pat them dry thoroughly with paper towels. Place the fillets skin side down on a parchment-lined quarter sheet baking pan. Season both with salt and pepper to taste.
  3. Make Marinade: In a small mixing bowl, combine the minced garlic, olive oil, Dijon mustard, freshly squeezed lemon juice, and honey. Stir well until the mixture is smooth and well blended.
  4. Apply Marinade: Spread about three-quarters of the marinade evenly over the top of each salmon fillet, ensuring a flavorful base layer.
  5. Prepare Pistachio Crust: Add the chopped pistachios to the remaining marinade mixture and stir until combined. Spoon this pistachio mixture evenly over the salmon fillets, then gently press it into the surface using the back of a spoon to form the crust.
  6. Bake: Place the baking pan in the preheated oven and bake the salmon for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork, indicating it is fully cooked.
  7. Rest and Serve: Remove the salmon from the oven and allow it to rest for 5 minutes. This resting period helps the juices redistribute, ensuring a moist and tender bite. Serve warm.

Notes

  • Ensure not to overbake the salmon to keep it moist and tender.
  • Patting the salmon dry before seasoning helps the marinade and crust adhere better.
  • Use freshly squeezed lemon juice for the best flavor.
  • Coarsely chop the pistachios to create a nice texture for the crust.
  • This recipe pairs beautifully with steamed vegetables or a fresh salad.
