A wholesome and crunchy Pistachio Cranberry Granola that combines rolled oats, roasted pistachios, dried cranberries, and nutrient-rich seeds, sweetened naturally with maple syrup and lightly spiced with cinnamon and cardamom. Perfect for a nutritious breakfast or snack, this granola is easy to make and stores well for up to two weeks.

  • 2 cups rolled oats
  • 1 cup roasted & salted pistachios, roughly chopped
  • 3/4 cup dried cranberries, chopped
  • 1/4 cup raw pepitas (pumpkin seeds)
  • 2 tablespoons chia seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom

Wet Ingredients

  • 1/4 cup avocado oil or coconut oil
  • 1/4 cup 100% grade A maple syrup

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Line an 11x17 inch baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped pistachios, chopped dried cranberries, raw pepitas, chia seeds, cinnamon, and cardamom. Stir well to evenly distribute all ingredients.
  3. Combine Wet Ingredients: In a small bowl or glass liquid measuring cup, whisk together the avocado or coconut oil and maple syrup until fully blended.
  4. Coat Dry Ingredients: Pour the wet mixture over the bowl of dry ingredients. Use a plastic spatula to thoroughly mix, ensuring all the dry components are well coated with the syrup and oil blend.
  5. Bake the Granola: Spread the granola mixture evenly onto the parchment-lined baking sheet, forming a thin layer. Bake in the preheated oven for 20-22 minutes, stirring halfway through baking to ensure even toasting.
  6. Cool and Store: Remove the granola from the oven and allow it to cool completely on the baking sheet. The granola will crisp up as it cools. Once cooled, transfer to an airtight container. Store in a cool, dry place for up to two weeks.
