Ingredients

Pineapple Turkey Tacos

  • 1 tablespoon avocado oil
  • ½ medium yellow onion, chopped
  • ½ tablespoon minced garlic
  • 1 pound ground turkey (97% lean)
  • 1 tablespoon homemade taco seasoning
  • ⅔ cup diced pineapple
  • ½ cup favorite jarred salsa
  • Favorite taco shells

For Serving

  • Sliced red cabbage
  • Diced red bell pepper
  • Shredded lettuce
  • Sliced avocado
  • Fresh cilantro
  • Lime juice

Instructions

  1. Heat the oil and sauté aromatics: Add avocado oil to a large skillet over medium heat. Once heated, add the chopped onion and minced garlic. Cook for about 3 to 4 minutes, stirring frequently, until the onion becomes translucent and fragrant.
  2. Cook the ground turkey: Add the ground turkey and homemade taco seasoning to the skillet. Stir and cook the turkey until it is almost browned, breaking the meat apart with a spatula as it cooks to ensure even browning.
  3. Add pineapple and salsa: Stir in the diced pineapple and jarred salsa. Reduce the heat slightly and let the mixture simmer until the turkey is fully cooked through and flavorful, about 3 to 4 more minutes.
  4. Assemble your tacos: Spoon the turkey pineapple filling into your favorite taco shells. Top with sliced red cabbage, diced red bell pepper, shredded lettuce, sliced avocado, fresh cilantro, and a squeeze of lime juice according to your preference.
