A refreshing and nutrient-packed Pineapple Beet Smoothie without banana, combining sweet frozen pineapple, earthy beets, and creamy coconut milk with a boost of collagen peptides. Perfect for a vibrant, healthy start to your day or a revitalizing snack.

Ingredients

Smoothie Ingredients

  • 2 cups frozen pineapple (260g)
  • ½ cup cooked beets (80g)
  • ½ cup cauliflower, steamed then frozen (60g)
  • 3 Tbsp collagen peptides
  • ¾ cup canned coconut milk (or any milk)
  • 1 Tbsp raw honey
  • Juice from ½ a lime

Instructions

  1. Combine Ingredients: Place the frozen pineapple, cooked beets, steamed and frozen cauliflower, collagen peptides, canned coconut milk, raw honey, and lime juice into your blender.
  2. Blend Smoothie: Start blending at a low speed to avoid splattering, then gradually increase the speed until the mixture reaches a thick, smooth, and consistent texture with no chunks.
  3. Serve: Pour the blended smoothie evenly into two glasses. Optionally, add your favorite smoothie toppings such as seeds, nuts, or fresh fruit, then enjoy immediately for the best flavor and nutrition.

Notes

  • Using frozen pineapple and frozen cauliflower helps achieve a creamy texture without needing ice.
  • Cook the beets beforehand for a sweeter, more digestible flavor; roasting or boiling works well.
  • Collagen peptides are optional but add a protein boost and support joint health.
  • Substitute the coconut milk with any preferred milk alternative to adjust creaminess and flavor.
  • Adjust the amount of honey depending on your preferred sweetness level.
  • For a vegan version, omit collagen peptides or use a plant-based protein powder instead.
