Ingredients

Base

  • 300 grams (approximately 30) Oreo cookies
  • 115 grams (1/2 cup or 1 stick) unsalted butter, melted

Chocolate Peanut Butter Layer

  • 200 grams (1 and 1/3 cup) good quality milk chocolate
  • 200 grams (1 and 1/3 cup) good quality dark chocolate
  • 125 grams (1/2 cup) smooth peanut butter

Crunchy Layer

  • 120 grams (3 cups) Rice Krispies or Rice Bubbles

Instructions

  1. Prepare the pan: Lightly grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang for easy removal.
  2. Make the Oreo crust: Add Oreo cookies to a food processor and pulse until crushed into fine crumbs. Mix the crumbs with melted butter until combined. Press this mixture evenly into the prepared pan to form a firm base. Refrigerate to set.
  3. Melt chocolates and peanut butter: In a heat-proof bowl, combine milk chocolate and dark chocolate. Melt in the microwave in 20-second intervals, stirring in between until smooth. Add peanut butter and stir until fully incorporated. If mixture is lumpy, heat briefly again until smooth.
  4. Combine with cereal: Place the Rice Krispies in a large bowl, pour the melted chocolate and peanut butter mixture over them, and stir quickly to evenly coat all the cereal.
  5. Assemble bars: Pour the coated cereal over the chilled Oreo crust in the pan. Smooth the top gently with a spatula or the back of a spoon.
  6. Set and serve: Refrigerate the assembled bars for 1 hour or until fully set. Once firm, cut into 16 squares and store them in the fridge until ready to enjoy.

Notes

  • Use good quality chocolates for a richer flavor and smooth texture.
  • Ensure the Oreo crust is firmly pressed and chilled, so the bars hold together well.
  • Store bars refrigerated and consume within 4-5 days for best freshness.
  • If you prefer a peanut-free version, substitute peanut butter with almond or sunflower seed butter.
  • Use parchment paper with overhanging edges for easier removal of the bars without breaking.
