A quick and delicious Peanut Butter Noodles recipe that combines creamy peanut butter, tangy soy sauce, and aromatic sesame oil for a flavorful Asian-inspired dish. Perfect for a speedy lunch or dinner, this recipe serves 2 and is ready in just 15 minutes.

Ingredients

Sauce Ingredients

  • ½ cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey (or maple syrup)
  • 2 tablespoons rice vinegar (or fresh lime juice)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon freshly grated ginger
  • 4 to 6 tablespoons water (as needed)

Main Ingredients

  • 12 ounces wheat noodles

Toppings

  • Chopped cilantro
  • Chopped green onions
  • Chopped peanuts
  • Chili oil

Instructions

  1. Cook the noodles: Bring a pot of salted water to a boil. Add the wheat noodles and cook according to the package directions until tender. Drain well and set aside.
  2. Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, toasted sesame oil, and freshly grated ginger. Add 4 tablespoons of water and whisk until the sauce is smooth. If the sauce is too thick, gradually add additional water, one tablespoon at a time, until you achieve a creamy and pourable consistency.
  3. Assemble the dish: Divide the cooked noodles evenly between two bowls. Pour the prepared peanut sauce over the noodles and toss gently to coat. Top each serving with chopped cilantro, green onions, chopped peanuts, and a drizzle of chili oil for added flavor and texture. Serve immediately and enjoy!

Notes

  • You can substitute maple syrup for honey to make this recipe vegan.
  • Use fresh lime juice instead of rice vinegar for a slightly different tangy flavor.
  • Add more chili oil if you prefer extra heat in your noodles.
  • Wheat noodles can be replaced with rice noodles or soba noodles for variation.
  • Adjust water quantity in sauce for your desired thickness.
