Ingredients

Peanut Streusel

  • ¼ cup brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¼ cup crushed peanuts
  • 3 tablespoons butter (melted)

Bread Batter

  • ¾ cup brown sugar (packed)
  • 1 cup milk
  • 2 eggs
  • ¾ cup creamy peanut butter
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped strawberries
  • ½ cup strawberry jam

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan, then line the bottom and two longest sides with parchment paper to ensure easy removal of the bread after baking.
  2. Make Peanut Streusel: In a small bowl, combine ¼ cup brown sugar, ¼ cup all-purpose flour, and ¼ cup crushed peanuts. Stir in the melted butter until the mixture is crumbly. Chill in the refrigerator while you prepare the bread batter.
  3. Mix Wet Ingredients: In a large bowl, whisk together ¾ cup brown sugar, 1 cup milk, 2 eggs, and ¾ cup creamy peanut butter until smooth and thoroughly combined.
  4. Add Dry Ingredients and Fruit: To the wet mixture, add 2 cups all-purpose flour, ½ teaspoon baking soda, and ½ teaspoon salt. Gently fold with a rubber spatula until just combined. Then fold in 1 cup chopped strawberries evenly.
  5. Incorporate Strawberry Jam: Spoon dollops of ½ cup strawberry jam over the batter. Gently fold the jam into the batter a few times to create pretty swirls without fully mixing.
  6. Transfer Batter to Pan: Pour the batter into the prepared loaf pan, spreading it evenly. Optionally, sprinkle extra chopped strawberries on top for decoration and added fruity flavor.
  7. Add Streusel Topping: Remove the peanut streusel from the fridge, crumble it with your hands or a fork, and evenly sprinkle over the top of the batter in the loaf pan.
  8. Bake the Bread: Bake for 60-75 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. To avoid over-browning, loosely cover the bread with parchment paper or aluminum foil halfway through baking.
  9. Cool and Serve: Remove the bread from the oven and place the loaf pan on a wire rack. Cool the bread in the pan for 1 hour. For clean slices, finish cooling completely on the wire rack before slicing. Serve plain or with additional butter, peanut butter, or jelly as desired.

Notes

  • Line the loaf pan with parchment paper up the sides to easily lift the bread out without breaking.
  • Don't overmix the batter to keep the bread tender.
  • Folding the strawberry jam lightly ensures beautiful swirls without overpowering the flavor balance.
  • Use fresh strawberries for best texture and flavor in the bread.
  • Allowing the bread to cool before slicing improves slice quality and prevents crumbling.
  • Loosely covering with foil mid-bake avoids excessive browning on top.
