Peanut Butter Frozen Yogurt Bites are creamy, healthy frozen yogurt treats featuring a fluffy peanut butter filling coated in a snap-worthy dark chocolate layer, topped with roasted salted peanuts and a touch of sea salt for added crunch and flavor. Perfect as a guilt-free snack or dessert, these bites are easy to make and delightfully refreshing.

Ingredients

Yogurt Mixture

  • 1 cup Greek yogurt
  • 2 tbsp maple syrup
  • 2 tbsp peanut butter
  • ¼ cup roasted salted peanuts

Chocolate Coating

  • 1 ½ cups dark chocolate chips
  • 1 ½ tbsp coconut oil
  • Sea salt, for sprinkling

Instructions

  1. Prepare Yogurt Mixture: In a bowl, mix together the Greek yogurt, maple syrup, and peanut butter until the mixture is smooth and well combined.
  2. Shape Bites: Use a spoon to drop 12 dollops of the yogurt mixture onto a parchment-lined baking sheet. Gently spread them out to about the size of cookies. Sprinkle each dollop with roasted salted peanuts. Place the tray in the freezer and freeze for 1 to 2 hours or until the bites are fully solidified.
  3. Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring thoroughly after each interval, until the chocolate mixture is smooth and melted completely.
  4. Dip Bites: Once the yogurt bites are frozen solid, remove them from the freezer. One by one, dip each bite into the melted chocolate, ensuring it is fully coated with the chocolate layer.
  5. Add Toppings: Immediately after dipping, sprinkle the chocolate-coated bites with additional chopped roasted peanuts and a small pinch of sea salt while the chocolate is still wet, to add texture and flavor contrast.
  6. Final Freeze: Place the coated bites back on the parchment-lined baking sheet and return to the freezer. Freeze for at least one hour or until the chocolate coating has completely set and hardened.

Notes

  • You can substitute maple syrup with honey or agave syrup for different sweetness profiles.
  • Use crunchy peanut butter if you desire more texture inside the bites.
  • For a nut-free version, use sunflower seed butter and omit peanuts on top.
  • Store the frozen yogurt bites in an airtight container in the freezer for up to one week for best quality.
  • Work quickly when dipping to prevent the yogurt bites from melting.
  • Dark chocolate with at least 70% cocoa is recommended for the best flavor and snap.
