Ingredients

Crust and Topping

  • 3 cups all purpose flour
  • 1½ cups sugar (divided)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, chilled and cut into chunks
  • 1 large egg

Filling

  • 2 (15-ounce) cans sliced peaches, drained and cut up
  • 4 teaspoons cornstarch

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to get it ready for baking the peach bars.
  2. Prepare the crust: Combine the flour, 1 cup of sugar, baking powder, and salt in a medium bowl. Add the chilled butter chunks and toss them in. Using a fork or pastry cutter, blend the butter into the flour mixture until it forms a crumbly texture. Lightly whisk the egg and stir it into the mixture. Press half of this dough mixture evenly into a greased 9x13-inch baking pan to form the bottom crust.
  3. Make the filling: In a separate bowl, mix the remaining ½ cup of sugar with the cornstarch. Add the drained, chopped peaches and gently toss to coat. Spread the peach mixture evenly over the pressed crust in the pan.
  4. Add the topping: Crumble the remaining half of the dough over the peach filling, distributing it evenly to cover the fruit.
  5. Bake: Place the baking pan in the preheated oven and bake for 45 to 55 minutes, until the top is lightly browned and the filling is bubbly.
  6. Cool and serve: Allow the peach bars to cool completely before cutting them into squares. Enjoy your delicious peach bars!

Notes

  • Make sure to chill the butter well for a crumbly, tender crust.
  • Drain peaches thoroughly to avoid a soggy crust.
  • Let the bars cool fully for clean cutting and best texture.
  • You can substitute fresh peaches if in season; just adjust for moisture accordingly.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
