This creamy Pasta Gorgonzola with mushrooms is a quick and indulgent Italian-inspired dish perfect for a cozy weeknight dinner. Sautéed mushrooms marry beautifully with rich gorgonzola sauce, walnuts add a wonderful crunch, and a touch of cheddar cheese enhances the flavor, making each bite both savory and satisfying.

Ingredients

Primary Ingredients

  • 200 gr pasta
  • 2 tbsp olive oil
  • 200 ml gorgonzola sauce
  • 200 gr mushrooms, sliced
  • 50 gr walnuts, roughly chopped
  • fresh parsley, for serving
  • 50 gr cheddar, grated, for serving
  • 1 tbsp butter

Instructions

  1. Prepare the gorgonzola sauce: Make sure you have prepared or have ready the gorgonzola sauce as per your preferred recipe or source, as this is essential for the dish.
  2. Cook the pasta: Bring a large pot of salted water to a boil on the stove. Add 200 grams of pasta and cook until al dente according to package instructions. Drain the pasta and reserve some of the starchy cooking water for later use. Toss the pasta with a little olive oil to prevent sticking.
  3. Sauté the mushrooms: Heat a large skillet over medium heat and add 1 tablespoon of olive oil along with 1 tablespoon of butter. Add the sliced mushrooms and cook until golden and tender, about 5-7 minutes.
  4. Combine sauce and pasta: Pour the 200 ml of gorgonzola sauce into the skillet with mushrooms, stirring to combine and heat through. Add the cooked pasta to the skillet and toss everything together, adding some reserved pasta water gradually as needed to create a smooth, creamy sauce coating the pasta evenly.
  5. Serve with toppings: Plate the pasta and garnish with chopped fresh parsley, roughly chopped walnuts for crunch, and a sprinkle of grated cheddar cheese for extra richness and flavor.

Notes

  • To keep the sauce creamy, add reserved pasta water gradually and stir until desired consistency is reached.
  • Use fresh mushrooms like cremini or button for the best texture and flavor.
  • Gorgonzola can be substituted with another blue cheese if desired, adjusting quantity to taste.
  • Walnuts add texture and a nutty flavor but can be omitted or replaced with pine nuts or toasted almonds.
  • For a vegetarian diet, ensure the pasta and gorgonzola sauce ingredients contain no animal-derived additives other than dairy.
