Parmesan Beans is a quick, flavorful side dish made by sautéing garlic, cannellini beans, and broth, then simmering until thickened and finishing with grated Parmesan and freshly cracked pepper. Perfect for a comforting, savory addition to any meal.

  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 2 (15 oz) cans Cannellini beans
  • 1/2 cup vegetable broth (or chicken broth)
  • 1/3 cup grated Parmesan cheese
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Sauté Garlic: Mince the garlic and add it to a large skillet with the olive oil. Sauté the garlic over medium heat for about one minute until fragrant but not browned.
  2. Add Beans and Broth: Drain the Cannellini beans but do not rinse them. Add the drained beans and vegetable or chicken broth to the skillet with the garlic. Stir to combine evenly.
  3. Simmer Beans: Bring the beans to a simmer. Allow them to simmer, stirring occasionally, for about 10 minutes until the mixture thickens slightly. The consistency should be thick enough that a spoon leaves a trail when stirred.
  4. Finish and Season: Stir in the grated Parmesan and freshly cracked pepper. Taste and adjust seasoning by adding more Parmesan, pepper, or salt if needed. Serve the beans hot as a delicious side dish.
