This Pan Seared Chicken Thighs recipe delivers juicy, flavorful chicken with a fragrant spice blend and a savory garlic-chicken broth sauce. Perfect for a quick, satisfying dinner, this dish pairs well with rice or vegetables.

Ingredients

Chicken and Seasoning

  • 2 tablespoons olive oil
  • 1 ½ pounds boneless, skinless chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon coriander
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Other Ingredients

  • 4 cloves garlic (sliced)
  • ½ cup chicken broth (or water)
  • Chopped parsley (for garnish)

Instructions

  1. Heat the Oil: Warm 2 tablespoons of olive oil in a large skillet over medium heat to prepare for cooking the chicken thighs.
  2. Season the Chicken: Pat the chicken thighs dry with a paper towel. Combine paprika, onion powder, coriander, cumin, turmeric, salt, and black pepper, then evenly season both sides of the chicken thighs with this spice blend.
  3. Sear the Chicken: Place the seasoned chicken thighs smooth side down in the hot skillet. Cook without moving them for 5-7 minutes until the chicken releases easily from the pan and develops a golden crust. Flip and cook for an additional 7-10 minutes, depending on thickness, until the juices run clear and the chicken is fully cooked.
  4. Add Garlic and Deglaze: Add sliced garlic to the skillet and cook for about 30 seconds until golden and fragrant. Pour in ½ cup of chicken broth to deglaze the pan, scraping up the browned bits from the bottom and sides to create a flavorful sauce.
  5. Serve: Remove the skillet from heat and spoon the garlic broth sauce over the chicken thighs. Garnish with freshly chopped parsley and serve immediately for best flavor and texture.

Notes

  • Patting the chicken dry ensures a better sear and crispier crust.
  • Adjust spices to taste if you prefer more or less heat.
  • Using chicken broth instead of water adds more depth to the sauce.
  • Serve with steamed vegetables, rice, or a fresh salad for a complete meal.
  • Make sure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
