Pan-fried tilapia fillets served with a rich and creamy pesto sauce, perfect for a quick and flavorful dinner. The tilapia is cooked until golden and tender, then topped with a luscious sauce made from heavy cream, pesto, chicken broth, and a hint of lemon juice, making an elegant dish that pairs wonderfully with pasta, mashed potatoes, or rice.

Ingredients

For the Tilapia

  • 1 tablespoon olive oil
  • 1 package Sea Cuisine Smart Indulgence Roasted Garlic and Herb Tilapia (frozen)

For the Pesto Cream Sauce

  • 1/2 cup heavy cream (or evaporated milk + 1 teaspoon cornstarch)
  • 1/3 cup pesto
  • 1 cup low sodium chicken broth
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: Heat 1 tablespoon olive oil over medium-high heat in a nonstick skillet. If your stove runs hot, reduce heat to medium to prevent burning.
  2. Cook the tilapia: Place the frozen tilapia fillets in a single layer in the skillet. Cook for 10-11 minutes, turning halfway through, until fish is golden on the outside and reaches a minimum internal temperature of 145°F. Transfer the cooked fish to a plate.
  3. Prepare the sauce base: Reduce heat to low and add heavy cream and pesto to the now empty skillet. In a separate bowl, whisk together chicken broth and cornstarch, then pour the mixture into the skillet.
  4. Simmer the sauce: Bring the sauce to a gentle simmer, stirring often until thickened to your desired consistency. Stir in lemon juice and season with about 1/8 teaspoon each of salt and pepper, adjusting to taste.
  5. Combine and serve: Return the cooked tilapia to the skillet and spoon the warm pesto cream sauce over the fillets. Serve immediately over pasta, mashed potatoes, or rice for a complete meal.

Notes

  • You can substitute heavy cream with evaporated milk mixed with cornstarch for a lighter sauce.
  • Ensure the fish reaches an internal temperature of 145°F for safe consumption.
  • If you prefer a thicker sauce, let it simmer a bit longer before adding the lemon juice.
  • Serve with your choice of side to balance the creamy sauce, such as steamed vegetables or a fresh salad.
