A flavorful and easy one-pot veggie rice recipe combining jasmine rice with a colorful mix of vegetables and smoked tofu, cooked together with a savory blend of soy sauce, hoisin, and garlic. Perfect for a quick, nutritious, and satisfying meal in under 30 minutes.

Ingredients

Rice and Sauces

  • 1 cup jasmine rice (or white rice, dry)
  • 1 cup water
  • ¼ cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp garlic (minced)
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar

Vegetables & Protein

  • 1 cup carrots and peas mix (frozen)
  • ½ cup broccoli florets (chopped small)
  • ½ red onion (diced)
  • 375 grams smoked tofu (one large block, cut into cubes)
  • Green onion (chopped, for garnish)

Instructions

  1. Combine Rice and Sauces: Add the jasmine rice to a medium pot along with the water, soy sauce, hoisin sauce, minced garlic, sesame oil, and rice vinegar. Stir well to evenly combine all the ingredients.
  2. Layer Vegetables and Tofu: Place the frozen carrots and peas mix, diced red onion, chopped broccoli, and cubed smoked tofu on top of the rice mixture without stirring to keep the layers distinct, which helps the rice cook evenly underneath.
  3. Cook the Rice Mixture: Bring the pot to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover the pot with a lid, and cook for 15 to 18 minutes until the liquid is fully absorbed and the rice is tender.
  4. Rest and Combine: Remove the pot from heat and let it sit covered for 5 minutes. After sitting, uncover and gently fold all ingredients together until the vegetables, tofu, and rice are evenly combined.
  5. Adjust and Serve: Taste the dish and adjust seasoning with extra hoisin sauce or rice vinegar if needed. Garnish with chopped green onion and serve warm.

Notes

  • Using jasmine rice enhances the aroma and texture but white rice can be used alternatively.
  • Do not stir the vegetables and tofu into the rice before cooking to ensure proper rice texture.
  • This recipe is naturally vegan and vegetarian-friendly.
  • You can substitute smoked tofu with any firm tofu or another preferred protein.
  • Adjust soy and hoisin sauce quantities to control saltiness and sweetness.
