Ingredients

Sauce and Base

  • 2 tablespoons oil from the jarred sun-dried tomatoes
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 teaspoons minced garlic
  • 2 tablespoon all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 2 cups chicken broth

Main

  • 1 (18-ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 2 cups chopped fresh spinach
  • ½ cup grated parmesan cheese

Seasoning and Garnish

  • Red pepper flakes, optional for garnish
  • Salt and pepper to taste, optional if needed

Instructions

  1. Prepare the Base: Heat a large skillet over medium-high heat. Add 2 tablespoons of oil from the jarred sun-dried tomatoes, 1 cup of chopped sun-dried tomatoes, and 2 teaspoons minced garlic. Cook for 1-2 minutes until fragrant, allowing flavors to develop.
  2. Create the Roux: Sprinkle 2 tablespoons of all-purpose flour, 2 teaspoons of Italian seasoning, and 1 teaspoon of paprika into the skillet. Stir well to combine with the tomato mixture, forming a roux that will thicken the sauce.
  3. Add Broth and Thicken Sauce: Gradually whisk in 2 cups of chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 3-5 minutes until the sauce starts to thicken to a creamy consistency.
  4. Cook the Tortellini: Add the 18-ounce package of refrigerated cheese tortellini to the skillet. Stir to coat the tortellini evenly with the sauce. Simmer for another 3-5 minutes until the tortellini are cooked through and tender.
  5. Finish with Cream and Greens: Turn off the heat and stir in 1 cup of heavy cream, 2 cups of chopped fresh spinach, and ½ cup of grated parmesan cheese. Mix until the spinach wilts and the cheese melts, creating a rich, creamy texture.
  6. Season and Garnish: Taste the dish and season with salt and pepper if needed. Optionally, garnish with a sprinkle of red pepper flakes for a touch of heat. Serve immediately and enjoy!
