A creamy, no-churn chocolate ricotta ice cream that's easy to make at home without an ice cream maker. This recipe combines the richness of ricotta cheese and sweetened condensed milk with Dutch process cocoa for a smooth, chocolatey treat perfect for a quick dessert.

Ingredients

Ice Cream Base

  • 8 ounces cold heavy cream
  • 16 ounces whole milk ricotta cheese
  • 1 14-ounce can sweetened condensed milk
  • ½ cup Dutch process cocoa powder
  • 2 tablespoons vanilla bean paste
  • 1 teaspoon kosher salt

Instructions

  1. Whip the heavy cream: Place the cold heavy cream in the bowl of an electric mixer and beat until stiff peaks form. Transfer the whipped cream to a separate bowl and set aside, leaving the mixing bowl unwashed.
  2. Prepare the chocolate ricotta mixture: In the same mixing bowl, add the whole milk ricotta cheese, sweetened condensed milk, Dutch process cocoa powder, vanilla bean paste, and kosher salt. Beat on medium speed until the mixture is smooth and fully combined, ensuring no lumps remain.
  3. Combine whipped cream and chocolate mixture: Turn off the mixer, then gently fold the whipped heavy cream into the chocolate ricotta mixture using a spatula. This folding keeps the ice cream light and airy.
  4. Freeze the mixture: Pour the combined mixture into a freezer-safe container. Cover it and freeze for 4 to 6 hours, allowing the ice cream to set and firm up.
  5. Scoop and serve: After freezing, scoop out the ice cream to serve. If the ice cream is too hard to scoop after longer freezing, let it sit at room temperature for a few minutes to soften before serving.

Notes

  • For best results, use full-fat ricotta cheese for creaminess and flavor.
  • Let the ice cream sit at room temperature for 5-10 minutes before scooping if it’s too hard.
  • This no-churn recipe is a great alternative to traditional ice cream makers.
  • Store leftovers in an airtight container to prevent freezer burn and maintain texture.
