These No Bake Pumpkin Energy Balls are healthy, energizing snacks made with pumpkin puree, oats, dates, and warm fall spices. Perfect for breakfasts or a quick snack, they combine chewy textures with cozy flavors without any baking required.

Ingredients

Dry Ingredients

  • 1 cup pitted Medjool dates (about 8 ounces or 10-12 large dates)
  • 1 cup old fashioned rolled or quick oats (gluten free if needed)
  • ¼ cup toasted pecan halves
  • 1 tablespoon chia seeds or ground flaxseed meal
  • 2 ¼ teaspoons pumpkin pie spice (or 1 1/4 teaspoons ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and 1/8 teaspoon cloves)
  • ⅛ teaspoon kosher salt

Wet Ingredients

  • ¼ cup pumpkin puree
  • 1 tablespoon pure maple syrup plus additional 1-3 teaspoons as desired
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon maple flavor or maple extract (optional)

Instructions

  1. Prepare Dates: If the dates are dry or hard, soak them in hot water for 10 minutes to soften, then drain and pat dry to prepare for blending.
  2. Pulse Dates: Transfer the dates to a food processor fitted with a steel blade. Pulse until they break into small pieces and begin forming a sticky ball.
  3. Add Remaining Ingredients: Add oats, toasted pecans, pumpkin puree, maple syrup, chia seeds, pumpkin pie spice, vanilla extract, maple extract (if using), and salt. Pulse again until the mixture is combined with oats and nuts chopped into small, roughly uniform pieces but not completely smooth.
  4. Adjust Sweetness: Taste the mixture and add an additional 1-3 teaspoons of maple syrup if a sweeter flavor is desired. Pulse briefly to incorporate.
  5. Chill Mixture: Transfer the combined mixture to a bowl. Cover and refrigerate for at least 30 minutes to allow it to firm up for easier shaping.
  6. Form Energy Balls: Using a spoon or cookie scoop, portion out the mixture and roll into 12 evenly sized balls.
  7. Store Properly: Place the formed balls in an airtight container and store in the refrigerator for up to 2 weeks or freeze for up to 2 months. Consume immediately if frozen or allow to sit at room temperature a few minutes to warm before eating if preferred.

Notes

  • Store energy balls covered in the refrigerator for up to 2 weeks for optimal freshness.
  • Freeze leftovers in an airtight container for up to 2 months.
  • Energy balls can be eaten straight from the freezer or allowed to warm slightly at room temperature.
  • If dates are dry or tough, soaking them prior to processing improves texture and blendability.
