These No Bake Matcha Cookie Dough Energy Bites are a quick and nutritious snack packed with almond and oat flour, plant protein, and the antioxidant-rich matcha green tea powder. Perfect for a healthy energy boost, they're made without baking and come together in just 10 minutes.

Ingredients

Dry Ingredients

  • 1 cup almond flour
  • ½ cup oat flour*
  • ¼ cup vanilla plant protein powder
  • ¼ cup ground flax**
  • 1 tbsp matcha green tea powder
  • ¼ tsp fine sea salt

Wet Ingredients

  • ½ cup cashew butter (or almond butter, peanut butter is not suggested)
  • ¼ cup pure maple syrup
  • 1 tbsp water

Instructions

  1. Combine Dry Ingredients: In a medium mixing bowl, whisk together the almond flour, oat flour, vanilla plant protein powder, ground flaxseed, matcha green tea powder, and fine sea salt until thoroughly mixed.
  2. Add Wet Ingredients and Mix: Add the cashew butter, maple syrup, and water to the dry mixture. Use your hands to work the ingredients together until the dough sticks easily and is no longer crumbly. If the dough is too crumbly, add a little more water incrementally until it holds together well.
  3. Form Balls and Store: Roll the dough into bite-sized balls. Store the energy bites in the refrigerator or freezer to keep them fresh and firm.

Notes

  • Oat flour can be made by finely grinding oats in a blender or food processor if store-bought oat flour is unavailable.
  • Ground flaxseed acts as a binder and adds omega-3 fatty acids and fiber.
  • For best taste and texture, use natural nut butters without added sugars or oils.
  • These energy bites keep well refrigerated for up to a week or in the freezer for longer storage.
  • Adjust water quantity slightly if the dough is too dry to ensure it binds well.
