These no-bake chocolate oat bars combine the hearty texture of oats with the rich flavors of peanut butter and chocolate. Easy to prepare in just 10 minutes, they make a perfect healthy snack or dessert without turning on the oven. With a luscious chocolate layer and a crunchy oat base, these bars are delicious, gluten-free friendly, and perfect for any time of day.

Ingredients

Oat Base

  • 2 cups quick oats (gluten-free if needed)
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla bean paste

Chocolate Layer

  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup creamy peanut butter (extra for drizzling)
  • 2-3 tbsp mini chocolate chips (for topping)

Instructions

  1. Prepare the Pan: Line an 8x8 inch baking pan with parchment paper, ensuring the paper extends over the edges for easy removal of the bars later.
  2. Mix Oat Base: In a medium bowl, combine the quick oats, 1/2 cup peanut butter, honey, and vanilla bean paste. Stir thoroughly until all ingredients are fully incorporated into a sticky, even mixture.
  3. Press First Layer: Transfer about 1 ½ cups of the oat mixture into the lined baking pan. Press down firmly with your hands or the back of a spoon to create a compact, even layer that will hold together when set.
  4. Make Chocolate Layer: Place the semi-sweet chocolate chips and 1/3 cup peanut butter into a microwave-safe bowl. Heat in 20 to 30 second intervals, stirring well between each, until the chocolate has completely melted and is smoothly combined with the peanut butter.
  5. Pour Chocolate: Evenly pour the melted chocolate and peanut butter mixture over the pressed oat layer in the pan, spreading it out gently to cover the surface.
  6. Add Remaining Oat Mixture and Toppings: Crumble the remaining oat mixture evenly over the chocolate layer, allowing the chocolate to peek through slightly. Drizzle extra melted peanut butter on top and sprinkle with mini chocolate chips for texture and flavor.
  7. Chill and Set: Refrigerate the assembled bars for at least 2 to 3 hours to allow them to firm up. Once set, remove from the pan using the parchment overhang and cut into 12 equal bars. Store any leftovers in the refrigerator or freeze for longer shelf life.

Notes

  • You can slice the bars into 16 smaller squares or 9 larger squares depending on your serving preference.
  • Use gluten-free oats to make this recipe suitable for those with gluten sensitivities.
  • If you prefer a less sweet snack, reduce the honey quantity slightly to taste.
  • For a nut-free version, substitute peanut butter with sunflower seed butter and check that your oats are processed in a nut-free facility.
  • Refrigeration is essential to allow the bars to set properly and hold together when cut.
