Moroccan Meatballs, also known as Meatball Tagine, are flavorful lamb or beef meatballs cooked in a richly spiced tomato sauce with a blend of fragrant Moroccan spices. This traditional dish is simmered gently on the stovetop and optionally finished with baked eggs nestled in the sauce. It’s perfect served with crusty bread or couscous for a hearty, comforting meal.

Ingredients

For the Meatballs

  • 1 pound ground lamb or ground beef
  • ¼ onion, grated
  • 2 Tbsp fresh parsley, chopped
  • 2 Tbsp fresh cilantro, chopped
  • 1 tsp paprika
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp turmeric
  • ¼ tsp cinnamon
  • ½ tsp ginger powder (optional)
  • 2 garlic cloves, grated
  • 2½ Tbsp olive oil

For the Sauce

  • 1 large onion, diced
  • 3 garlic cloves, finely chopped
  • 1½ tsp paprika
  • ¼ tsp turmeric
  • ¼ tsp cinnamon
  • ½ tsp pepper
  • ½ tsp cumin
  • 1 tsp coriander
  • ¼ tsp ginger powder or 1 tsp fresh grated ginger (optional)
  • ¼ tsp cayenne pepper
  • Salt to taste
  • 1 Tbsp tomato paste
  • 1½ cups grated tomatoes
  • 2 Tbsp fresh parsley, chopped
  • 2 Tbsp fresh cilantro, chopped
  • ¼ cup water

Optional

  • 3-4 eggs (optional but highly recommended)

Instructions

  1. Prepare Meatballs: In a large bowl, combine all meatball ingredients—ground lamb or beef, grated onion, parsley, cilantro, paprika, cumin powder, coriander powder, salt, pepper, turmeric, cinnamon, ginger powder (if using), grated garlic, and olive oil. Mix gently with your hands until just combined. Form into 1¼ inch meatballs and refrigerate while preparing the sauce.
  2. Sauté Base: Heat olive oil in a wide skillet or tagine over medium-high heat. Add diced onion and sauté until it becomes light golden brown. Add finely chopped garlic and cook for an additional minute, releasing the aromatics.
  3. Add Spices and Tomato Paste: In a small bowl, mix together paprika, turmeric, cinnamon, pepper, cumin, coriander, cayenne, and ginger powder. Add this spice mix to the onions and garlic, stirring well to coat and cook for a minute to release the flavors. Stir in tomato paste and cook for another minute.
  4. Make Sauce: Add grated tomatoes, fresh parsley, cilantro, and salt to the skillet. Mix thoroughly. Pour in water and reduce heat to medium-low. Simmer the sauce gently for 25-30 minutes, stirring occasionally until the sauce thickens to desired consistency. Taste and adjust seasoning as needed.
  5. Cook Meatballs: Gently add the meatballs to the sauce. Cover the pan and simmer for 10-15 minutes, turning the meatballs halfway through cooking to evenly coat them in the sauce and ensure they are cooked through.
  6. Add Eggs (Optional): Use a spoon to make 3-4 small wells in the sauce between the meatballs. Crack one egg into each well. Cover and cook for an additional 10-15 minutes, until the egg whites are set and yolks are cooked to your preference (commonly runny).
  7. Garnish and Serve: Sprinkle fresh parsley or cilantro on top. Serve immediately with warm crusty bread or couscous drizzled with extra virgin olive oil. Optionally, stir in green olives for added flavor.

Notes

  • Ground lamb gives the most authentic, rich flavor, but ground beef is a good substitute.
  • Using a tagine pot if available enhances the authenticity, but a wide skillet works perfectly well.
  • Simmering the sauce slowly allows the spices to fully develop and the sauce to thicken nicely.
  • The addition of eggs in the sauce is traditional and recommended for added richness.
  • Adjust cayenne pepper to your preferred heat level for milder or spicier taste.
  • Serve with couscous or crusty bread to soak up the flavorful sauce.
