A flavorful and quick Mongolian Ground Beef Noodles recipe featuring tender rice noodles tossed in a rich, savory-sweet sauce with ground beef, ginger, and garlic, garnished with green onions and sesame seeds for an easy weeknight dinner.

Ingredients

Protein & Noodles

  • 10 ounces rice noodles
  • 1 pound ground beef (80/20)

Fresh Aromatics & Garnish

  • 1 teaspoon fresh ginger (finely minced)
  • 4 garlic cloves (finely minced)
  • Green onions (sliced, for garnish)
  • White sesame seeds (for garnish)

Sauce

  • ½ cup low-sodium soy sauce
  • 2 tablespoons dark soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 3 tablespoons cornstarch

Instructions

  1. Prepare the sauce: Whisk together low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch in a bowl until smooth. Set aside to use later.
  2. Cook the noodles: Prepare the rice noodles according to the package instructions, typically soaking or boiling until tender. Drain and set aside.
  3. Brown the beef: Heat a little cooking oil in a large wok or skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon or spatula. Cook until the beef is mostly browned and no longer pink.
  4. Sauté aromatics: Add finely minced ginger and garlic to the beef. Continue cooking for 2-3 minutes until fragrant and aromatic.
  5. Add and thicken sauce: Pour the prepared sauce over the beef. Reduce heat slightly and let it simmer for 3-4 minutes, stirring occasionally, until the sauce thickens.
  6. Toss noodles: Add the cooked rice noodles directly into the skillet with the beef and sauce. Toss gently to combine, ensuring the noodles are fully coated with the thickened sauce.
  7. Garnish and serve: Remove from heat and garnish with sliced green onions and white sesame seeds. Serve immediately.

Notes

  • For best results, use fresh minced ginger and garlic to maximize flavor.
  • Cooking times for rice noodles vary by brand; follow package directions carefully.
  • If the sauce is too thick, add a splash of water to loosen to your desired consistency.
  • Use 80/20 ground beef for ideal fat content that keeps the dish juicy and flavorful.
  • To make this dish gluten-free, substitute soy sauce with tamari or a gluten-free soy sauce alternative.
