Perfect as a wholesome breakfast or an indulgent snack, this recipe combines the natural sweetness of ripe bananas with the earthiness of matcha, creating a delightful balance of taste and texture.

Ingredients

Wet Ingredients

  • 3 ripe bananas (optional: one extra banana for decor on top)
  • ½ tablespoon vanilla bean paste
  • 60 ml plant milk
  • 60 ml oil
  • 1 tablespoon flax meal

Dry Ingredients

  • 2 tablespoons matcha (high-grade)
  • 250 g all-purpose flour
  • 180 g cane sugar
  • 2 teaspoons baking powder
  • 1 pinch of salt

Add-ins

  • 100 g white chocolate chips
  • 100 g walnuts (chopped)

Instructions

  1. Preheat the Oven: Set your oven to 180°C (355°F). Prepare your loaf pan by greasing it and sprinkling with flour, or alternatively, line it with parchment paper to prevent sticking.
  2. Mash Bananas and Mix Wet Ingredients: In a mixing bowl, mash the ripe bananas using a fork or potato masher until smooth. Whisk in the vanilla bean paste, plant milk, oil, and flax meal until the mixture is thoroughly combined.
  3. Combine Dry Ingredients: Add the matcha powder, all-purpose flour, cane sugar, baking powder, and a pinch of salt to the wet mixture. Whisk everything together until the batter is smooth and uniform.
  4. Fold in Walnuts: Gently fold in the chopped walnuts to incorporate them evenly throughout the batter without overmixing.
  5. Pour Batter into Loaf Pan: Transfer the batter into the prepared loaf pan, filling it about two-thirds full to allow room for rising during baking.
  6. Add Optional Toppings: Optionally, sprinkle the top with extra cane sugar and white chocolate chips, or place halved slices of the extra banana on top for decoration and added flavor.
  7. Bake the Bread: Place the loaf pan in the preheated oven and bake for 40 to 50 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean. The internal temperature of the bread should reach between 200°F and 205°F (93-96°C).
  8. Cool and Serve: Allow the bread to cool in the pan for at least 10 minutes before removing it onto a wire rack to cool completely. Serve once cooled or enjoy warm immediately.

Notes

  • Use high-grade matcha powder for the best vibrant color and rich flavor.
  • Ripe bananas enhance the natural sweetness; the browner the bananas, the better.
  • Plant milk can be any non-dairy milk such as almond, soy, or oat milk.
  • Flax meal acts as a binder and adds fiber; ensure it is well mixed with the wet ingredients.
  • Adjust sugar quantity according to your sweetness preference.
  • Check the bread towards the end of baking to avoid overbaking and dryness.
  • Let the bread cool completely for easier slicing.
