Perfect for an easy weeknight dinner, this recipe combines fresh cheese tortellini with sun-dried tomatoes, garlic, and spinach in a luscious Parmesan cream sauce made from scratch in just about 20 minutes.

Ingredients

Base Ingredients

  • 2 tablespoons Olive Oil
  • 6 Garlic Cloves, minced
  • ½ cup Sun Dried Tomatoes in oil
  • 1 teaspoon Italian seasoning
  • 1 pinch Red Pepper Flakes

Sauce Ingredients

  • 2 tablespoons Flour
  • 2 cups Pacific Vegetable Broth
  • ½ cup Heavy Cream
  • 1 cup Parmigiano Cheese, grated

Pasta and Vegetables

  • 20 oz Fresh Cheese Tortellini (about 5 cups)
  • 2 cups Fresh Spinach

Instructions

  1. Sauté Aromatics: Add olive oil, minced garlic, sun-dried tomatoes including their oil, Italian seasoning, and red pepper flakes into a heavy-bottomed pot. Cook over medium heat for 3-4 minutes until the garlic is tender and fragrant.
  2. Create the Roux: Sprinkle in the flour and cook for about 3 minutes, stirring continuously to form a roux which will thicken the sauce.
  3. Add Broth and Thicken: Pour in the vegetable broth and raise the heat to bring it to a boil. Allow the mixture to thicken for 3-5 minutes while stirring occasionally.
  4. Cook Tortellini: Add the fresh cheese tortellini and a pinch of salt to the pot. Stir well to combine and cook until the tortellini is tender and cooked through, about 3-5 minutes.
  5. Finish the Sauce: Turn off the heat, then gently stir in the heavy cream, grated Parmigiano, and fresh spinach. Mix until the spinach wilts and the sauce is creamy and well combined.
  6. Adjust Consistency and Season: If the sauce feels too dry, add more vegetable broth, heavy cream, or milk to achieve your desired sauciness. Optionally, for extra creaminess, stir in 4 oz cream cheese. Season with salt and freshly ground black pepper to taste.
