A vibrant and creamy Mango Chicken Curry combining tender chicken breasts simmered in a flavorful blend of spices, fresh mango, and yogurt, served over rice and garnished with chopped cilantro. This dish balances sweet and savory elements with warming yellow curry, making it a comforting yet refreshing meal that comes together in just 35 minutes.

Ingredients

For the Curry

  • 2 tbsp oil
  • 1 brown onion, sliced
  • 2 tsp minced garlic
  • 4 tsp minced ginger
  • 1 tbsp yellow curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp salt, plus extra to taste
  • 2 large chicken breasts, diced (or 3 medium chicken breasts)
  • 2 cups chopped mango (fresh or thawed)
  • 1 cup plain yogurt
  • ½ cup water
  • ½ cup almond flour (or regular flour, see note)

To Serve

  • Chopped cilantro
  • Cooked rice

Instructions

  1. Heat the oil and sauté onions: Warm 2 tablespoons of oil in a large skillet, shallow casserole, or frying pan over medium-high heat until shimmering. Add the sliced brown onion and cook until soft and starting to brown, about 5 minutes.
  2. Add garlic, ginger, and spices: Stir in 2 teaspoons minced garlic and 4 teaspoons minced ginger, cooking for about one minute until fragrant. Mix in 1 tablespoon yellow curry powder, 1 teaspoon cumin, 1 teaspoon turmeric, and 1 teaspoon salt, cooking for another minute to toast the spices and develop flavor.
  3. Cook the chicken partially: Add the diced chicken breasts to the pan and stir well to coat with the onion and spice mixture. Cook for about 5 minutes, stirring occasionally until the chicken is no longer visibly raw, though it will not be fully cooked yet.
  4. Add mango and liquids: Stir in 2 cups chopped mango, 1 cup plain yogurt, ½ cup water, and ½ cup almond flour. Reduce the heat to medium and allow the curry to simmer gently for 10 minutes, stirring occasionally, until the sauce thickens and the chicken is fully cooked through.
  5. Adjust seasoning and serve: Taste the curry and add extra salt if needed. Serve the Mango Chicken Curry hot over cooked rice, garnished with chopped cilantro for freshness.

Notes

  • You can substitute almond flour with regular flour if preferred; this will slightly change the texture.
  • Using fresh mango is ideal, but thawed frozen mango works well when fresh is not available.
  • Cooked rice pairs perfectly to soak up the flavorful sauce.
  • Adjust the salt to taste before serving for best results.
