Magic Lemon Custard Cake is an easy-to-make, irresistibly lemony dessert that magically separates into three distinct layers when baked: a light and fluffy top, a rich creamy middle, and a solid custard base. This American classic is tart, creamy, and melts in your mouth, offering a delightful balance of texture and flavor that's perfect for any occasion.

Ingredients

Egg Whites

  • 4 large eggs, room temperature, separated
  • 1/4 teaspoon cream of tartar (optional)

Wet Ingredients

  • 1/2 cup unsalted butter, melted and cooled (1 stick)
  • 1 teaspoon vanilla paste or extract
  • 1/4 cup lemon juice (from about 2 large lemons)
  • 2 tablespoons finely grated lemon zest (from about 2 large lemons)
  • 1 3/4 cups whole milk, room temperature

Dry Ingredients

  • 3/4 cup sugar
  • 1/2 teaspoon kosher salt
  • 3/4 cup all-purpose flour, sifted

Optional

  • Powdered sugar for dusting

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (165°C) and place the rack in the middle position. Line an 8×8 inch baking dish with parchment paper to prevent sticking and ensure easy removal of the cake.
  2. Whip Egg Whites: Carefully separate the egg whites from the yolks, making sure no yolk contaminates the whites. Place the egg whites in a clean bowl of a stand mixer fitted with the whisk attachment. Add the cream of tartar to stabilize the whites. Whisk on medium-high speed until stiff peaks form, about 3 to 5 minutes. Set aside the whipped whites in a separate bowl.
  3. Mix Egg Yolks: Without cleaning the bowl, add the separated egg yolks and whisk on medium-high speed until foamy, approximately 1 minute. Gradually drizzle in the sugar while continuing to whisk until the yolks lighten in color and become creamy, about 2 to 3 minutes. Add the salt, melted butter, and vanilla extract, then beat for another 1 to 2 minutes until fully incorporated.
  4. Add Dry Ingredients and Flavorings: Switch the mixer to the paddle attachment. Gradually add the sifted flour and mix on medium-low speed until the batter is smooth and combined. Add the fresh lemon juice and lemon zest, then slowly pour in the whole milk, beating until everything is well blended. Scrape down the sides and bottom of the bowl with a silicone spatula to ensure even mixing.
  5. Fold in Egg Whites: Gently fold one-third of the whipped egg whites into the yolk batter using a silicone spatula. Repeat folding twice more with the remaining egg whites, being careful not to overmix—the batter should retain some airy pockets from the egg whites for a light texture.
  6. Bake the Cake: Pour the combined batter into the prepared baking pan. Bake in the preheated oven for 45 to 55 minutes, or until the top is lightly golden and the center jiggles slightly when gently shaken, indicating the custard layers have set correctly.
  7. Cool and Chill: Allow the cake to cool completely at room temperature on a wire rack. Once cool, cover the cake and refrigerate for at least 1 hour, preferably overnight, to let the custard layers firm up and flavors develop.
  8. Serve: Remove the cake from the pan by lifting the parchment paper. Dust generously with powdered sugar if desired. Cut into 9 squares and serve chilled or at room temperature for a luscious lemon custard dessert experience.

Notes

  • Make sure the eggs are at room temperature before starting for better volume when whipping whites.
  • Be gentle when folding in the egg whites to preserve the airiness crucial for the cake’s layer separation.
  • Using fresh lemon juice and zest will give a brighter, more authentic lemon flavor.
  • Chilling the cake overnight enhances the custard texture and flavor.
  • If powdered sugar is unavailable, a light dusting of finely grated lemon zest can add a fresh finish.
  • Ensure the baking pan is properly lined with parchment paper to easily remove the delicate cake without breaking.
