A refreshing Lemony Cucumber Couscous Salad that combines tender pearl couscous with crisp cucumbers, fresh parsley, zesty lemon, and creamy feta cheese. Perfect as a light lunch or a vibrant side dish, this salad is bursting with bright, citrusy flavors and a delightful mix of textures.

Ingredients

Main Ingredients

  • 1.5 cups pearl couscous
  • 1 fresh lemon
  • 2 Tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1 English cucumber
  • 1/2 cup parsley, roughly chopped
  • 1/4 tsp freshly cracked pepper
  • 3 oz. feta cheese, crumbled

Instructions

  1. Cook couscous: Bring a pot of water to a boil. Add the pearl couscous and boil for about 5 minutes until tender. Drain the couscous in a colander or a wire strainer, then rinse briefly with cool water to cool it off. Let it drain fully while you prepare the remaining ingredients.
  2. Prepare lemon: Zest the lemon to obtain about ½ teaspoon of zest, then squeeze the juice to get roughly 3 tablespoons. Set both aside.
  3. Make dressing: In a bowl, combine the lemon juice, olive oil, garlic powder, salt, and freshly cracked pepper. Stir well to create a flavorful dressing.
  4. Prepare vegetables and herbs: Chop the cucumber into quarter-round slices. Roughly chop the parsley. These fresh elements will add crunch and brightness to the salad.
  5. Assemble salad: In a large bowl, combine the cooled couscous, chopped cucumber, parsley, lemon zest, and crumbled feta cheese. Pour the lemon dressing over the mixture and gently toss to combine all flavors evenly.
  6. Serve: Serve the salad immediately for the freshest taste or refrigerate until ready to eat. This salad can be enjoyed cold or at room temperature.

Notes

  • For extra flavor, you can add a handful of chopped mint alongside the parsley.
  • To make this salad vegan, omit the feta cheese or substitute with a plant-based alternative.
  • This salad keeps well refrigerated for up to 2 days; toss gently before serving.
  • Adjust the seasoning with more salt or lemon juice to taste if needed.
