Perfect for serving with crackers, fresh vegetables, or warm pita, this easy no-cook dip is a wholesome and vibrant addition to any snack or party platter.

Ingredients

Main Ingredients

  • 14-ounce can white beans, rinsed and drained (about 1 1/2 cups cooked white beans)
  • 12-ounce jar marinated artichoke hearts (about 1 1/2 cups), drained, save the marinade
  • 2 cloves garlic
  • 3 tablespoons tahini paste
  • 3/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • Zest from one large lemon, divided
  • 1 tablespoon olive oil, plus additional for drizzling
  • 3-4 tablespoons artichoke marinade (reserved from the jar)

Instructions

  1. Prepare Ingredients: Rinse and drain the white beans thoroughly. Drain the marinated artichoke hearts, reserving the marinade for later use. Zest one large lemon, dividing the zest into two portions.
  2. Blend the Dip: In a food processor, combine the white beans, garlic cloves, drained artichoke hearts, tahini paste, salt, cracked pepper, two-thirds of the lemon zest, 1 tablespoon olive oil, and 3 tablespoons of the reserved marinade. Process until the mixture is ultra-smooth and creamy, which may take up to 2 minutes to achieve a velvety texture.
  3. Adjust Consistency and Flavor: Taste the dip and adjust seasoning by adding more salt if needed. For a looser, creamier consistency, add additional marinade one tablespoon at a time until desired thickness is reached.
  4. Serve the Dip: Spoon the artichoke dip into a medium-sized shallow bowl. Using the back of a spoon, create a circular well in the center of the dip to hold olive oil.
  5. Garnish: Drizzle a couple of tablespoons of olive oil into the well created on the dip. Sprinkle some chili flakes and scatter fresh herbs on top, followed by the remaining lemon zest for a burst of fresh aroma and flavor.
  6. Enjoy: Serve immediately with crackers, fresh veggies, chips, or warm toasty pita bread for dipping.

Notes

  • The dip can be prepared ahead of time and refrigerated; bring it to room temperature before serving for the best flavor and texture.
  • Adjust the amount of chili flakes or add other fresh herbs like parsley or cilantro to customize the flavor.
  • Use a high-powered blender like a Vita-Mix for an ultra-creamy texture.
  • Leftover marinade from the artichokes is key to adding flavor and loosening the dip as needed.
