Ingredients

Dry Ingredients

  • 2¼ cups all-purpose flour
  • 1 tablespoon lemon zest
  • 2¼ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 4½ tablespoons granulated sugar

Wet Ingredients

  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 1½ cups whole milk
  • ¼ cup vegetable oil
  • 3 tablespoons lemon juice (strained)
  • 1 cup ricotta cheese

Instructions

  1. Heat the griddle: Preheat your griddle to 325℉ (165℃) ensuring it's hot enough for perfect pancakes without burning.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, lemon zest, baking powder, baking soda, salt, and sugar until evenly combined. Set this mixture aside.
  3. Combine wet ingredients: In a medium bowl, whisk together the eggs, egg yolk, whole milk, vegetable oil, strained lemon juice, and ricotta cheese until smooth and well incorporated.
  4. Combine wet and dry: Pour the wet ingredients over the dry ingredients and gently whisk together until the batter is smooth without overmixing, which can toughen the pancakes.
  5. Prepare the griddle: Lightly spray the preheated griddle with cooking spray or brush it with oil to prevent sticking.
  6. Cook pancakes: Ladle the batter onto the hot griddle, making pancakes of your desired size.
  7. Flip pancakes: When bubbles begin to form on the surface and the edges appear dry, carefully flip the pancakes to cook the other side.
  8. Finish cooking: Continue cooking on the second side until golden brown and cooked through. Remove from griddle and serve warm.

Notes

  • Use room temperature eggs and milk for better batter consistency and rise.
  • Do not overmix batter to ensure fluffy pancakes.
  • Adjust griddle heat as needed to prevent burning or undercooked centers.
  • Serve with maple syrup, fresh berries, or a dusting of powdered sugar.
  • Ricotta adds creaminess and moisture to pancakes without heaviness.
