This Lemon Parmesan Pearl Couscous recipe is a quick and flavorful side dish combining buttery sautéed garlic, tender pearl couscous simmered in chicken stock, and finished with fresh Parmesan cheese and a hint of lemon juice. Perfect for a 25-minute meal that complements a variety of main courses.

Ingredients

Ingredients

  • 2 tablespoons butter
  • 2 large cloves garlic, pressed or minced
  • 1 1/2 cups (8 ounces) pearl couscous
  • 2 cups chicken stock
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly-ground black pepper
  • 1 cup (1 ounce) freshly-grated Parmesan cheese
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Sauté the garlic and couscous: Melt the butter in a medium sauté pan over medium-high heat. Add the minced garlic and sauté for 1 minute, stirring frequently to release the aroma without burning. Add the pearl couscous and continue sautéing for 2-3 minutes, stirring occasionally, until the couscous is lightly toasted and golden.
  2. Simmer the couscous: Pour in the chicken stock, then add the salt and black pepper. Stir to combine and allow the mixture to come to a gentle simmer. Once simmering, reduce the heat to medium-low and cover the pan with a lid. Let the couscous simmer for 10-12 minutes, stirring occasionally, until most of the liquid has been absorbed and the couscous is tender but still slightly firm to the bite. If the couscous appears too dry and undercooked, add an extra ¼ cup of chicken stock or water as needed.
  3. Finish with cheese and lemon: Remove the pan from heat and stir in the freshly grated Parmesan cheese and optional lemon juice until evenly combined. Taste and adjust seasoning with additional salt, pepper, or lemon juice to your preference.
  4. Serve: Serve the lemon Parmesan pearl couscous warm as a delicious side dish to complement your meal and enjoy!

Notes

  • For a vegetarian version, substitute chicken stock with vegetable broth.
  • To enhance lemon flavor, add some lemon zest along with the juice.
  • Use fresh Parmesan for the best flavor and texture.
  • If desired, garnish with freshly chopped parsley or basil for added color and freshness.
  • Stir gently to avoid breaking the couscous grains for a better texture.
