Lebanese Meat Stuffed Pitas (Arayes) feature pocket pitas filled with a flavorful homemade kafta mixture made of ground beef, fresh herbs, and aromatic spices. These stuffed pitas are grilled or pan-fried until the bread is crispy and the meat cooked perfectly. Ideal as a snack, appetizer, or main course, they pair wonderfully with garlic or tahini sauce for a delicious Middle Eastern experience.

Ingredients

Meat Mixture

  • 1 lb ground beef (95-99% lean)
  • ½ medium onion, cut into a few pieces
  • ½ cup parsley, packed
  • 5 cloves garlic
  • 2 teaspoons tomato paste
  • 1 teaspoon ground allspice
  • 1 teaspoon Baharat seasoning (7-spice blend)
  • ½ teaspoon hot paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • 1 tablespoon pomegranate molasses (optional)
  • 1¼ teaspoon kosher salt

Bread and Oil

  • 4-5 flat Lebanese bread, Palestinian, or Greek pita pockets
  • 1 tablespoon olive oil, plus more for brushing

Serving Suggestions

  • Garlic sauce (toum) or tahini sauce

Instructions

  1. Combine: In the bowl of a food processor, pulse the onions, garlic, and parsley until minced. Transfer to a mixing bowl and add the ground beef, kosher salt, tomato paste, ground allspice, Baharat seasoning, hot paprika, ground cumin, ground cinnamon, and pomegranate molasses if using. Mix thoroughly using your hands or a wooden spoon until all ingredients are well combined. Alternatively, you can pulse all ingredients together in the food processor until combined but still slightly coarse.
  2. Fill: Cut each pita into 4 equal pieces. Spoon about 2 tablespoons of the meat mixture into each pita piece, pressing gently with the back of the spoon to evenly distribute and pack the filling inside the pocket.
  3. Cook (Pan-Fry or Grill): Heat a large cast-iron grill pan or grill pan over medium-high heat. Brush both sides of the stuffed pitas with olive oil. Once the pan is hot, place four arayes on it and cook for 3-5 minutes per side or until the bread is golden brown, crispy, and the meat inside is cooked through to your liking.
  4. Alternative Cooking Methods: To bake, place stuffed pitas on a wire rack set over a baking sheet and bake in a preheated 425ºF oven for 10-14 minutes, flipping halfway through, adjusting time depending on pita thickness. To air fry, preheat air fryer to 375ºF, place arayes inside, and cook for 7-12 minutes flipping halfway until golden and cooked.
  5. Serve: Serve the hot Lebanese meat stuffed pitas with garlic sauce (toum) or tahini sauce for dipping to complement the rich flavors.

Notes

  • Use lean ground beef for less grease and firmer filling.
  • Pomegranate molasses adds subtle tanginess and sweetness but is optional.
  • Adjust spices to your taste, especially for heat level.
  • Choosing thinner Lebanese pita requires less cooking time compared to thicker Greek pitas.
  • Garlic sauce (toum) or tahini sauce enhances the flavor and adds a creamy texture.
  • Ensure pita pockets are sealed well to prevent filling from falling out while cooking.
