Ingredients

Dry Ingredients

  • 5 oz (1 cup) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon table salt

Wet Ingredients

  • 5 oz unsalted butter, room temperature
  • 6 oz (1 ½ cups) confectioner sugar
  • 1 tablespoon lemon juice
  • 1 egg, room temperature

Flavorings

  • 2 teaspoons lavender blossoms, minced (plus extra for decorating)

Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 350 °F (175 °C). Line two baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix wet ingredients and lavender: Mince 2 teaspoons of lavender blossoms into a rough powder. In a large mixing bowl or stand mixer, cream together the unsalted butter, confectioner sugar, and minced lavender until the mixture is light and fluffy. Scrape down the sides of the bowl as necessary.
  3. Add lemon juice and egg: Incorporate the lemon juice into the creamed mixture and mix until combined. Then, add the egg and beat until fully incorporated, scraping the bowl to ensure even mixing.
  4. Combine dry ingredients and mix: Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients and mix until just combined to form the cookie dough.
  5. Portion cookies and add decoration: Using a 0.75 oz scoop or a tablespoon, place scoops of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading. Lightly sprinkle a few lavender buds atop each cookie for a decorative and fragrant touch.
  6. Bake the cookies: Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the centers are set but still soft.
  7. Cool the cookies: Let the cookies cool on the baking sheets for 5 minutes to set properly, then transfer them to a wire rack to cool completely.
  8. Store cookies: Once fully cooled, store the lavender cookies at room temperature in a covered container to maintain freshness.

Notes

  • Ensure butter and egg are at room temperature to achieve a smooth batter and better texture.
  • Using parchment paper prevents cookies from sticking and helps with even baking.
  • The cookies will spread during baking, so provide enough space between each dough scoop.
  • Extra lavender blossoms used for decorating add visual appeal and enhance aroma.
  • For a stronger lavender flavor, increase the minced blossoms slightly but avoid overpowering the dough.
