Kronk's Spinach Puffs are deliciously golden, flaky pastry snacks filled with a savory mixture of spinach, garlic, dill, cream cheese, and feta. These bite-sized puffs are perfect as an appetizer or a light snack, combining creamy and fresh flavors wrapped in crisp puff pastry baked to perfection.

Ingredients

Spinach Filling

  • 1 tablespoon olive oil
  • 1 shallot, finely diced
  • 3 1/2 cups spinach, finely chopped
  • 2 teaspoons minced garlic
  • 3 tablespoons fresh dill, chopped
  • 4 ounces cream cheese
  • 1/2 cup feta cheese
  • 2 eggs, separated
  • Salt and pepper, to taste

Pastry

  • 1.1 pounds puff pastry (two sheets of frozen pre-made puff pastry, thawed)

Instructions

  1. Sauté Shallots and Spinach: Heat olive oil in a skillet over medium heat. Add the finely diced shallots and cook until they become transparent. Then add the chopped spinach, minced garlic, and chopped dill. Cook the mixture until the spinach has wilted and the garlic is fragrant, stirring occasionally.
  2. Combine Filling Ingredients: In a large bowl, mix the warm spinach mixture with the cream cheese, feta cheese, one egg yolk, and a pinch of salt and pepper until fully incorporated and creamy. Set aside.
  3. Prepare Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface and cut into 12 equal squares.
  4. Assemble Puffs: Place each pastry square into a cup of a muffin tin to help shape them. Spoon a rounded tablespoon of the spinach and cheese mixture into each pastry cup.
  5. Seal and Glaze: Pinch the corners of each pastry square together over the filling to form little puffs. In a small bowl, whisk together the remaining egg yolk and egg white. Brush this egg wash over the tops of each pastry to give them a shiny golden finish when baked.
  6. Bake: Preheat the oven to 450°F (232°C). Bake the filled puff pastry cups for 15 to 20 minutes or until the tops turn a beautiful golden brown. Remove from the oven and serve hot.

Notes

  • Ensure the puff pastry is fully thawed before rolling to avoid cracking.
  • For a stronger dill flavor, use fresh dill rather than dried.
  • If you prefer, substitute cream cheese with ricotta for a lighter texture.
  • Serve these puffs warm to enjoy the best flaky texture and creamy filling.
  • You can prepare the filling a day ahead and refrigerate it, then assemble and bake when ready.
