This keto-friendly Broccoli Spinach Casserole is a creamy, cheesy, and comforting dish perfect for a low-carb meal. It combines tender broccoli and fresh spinach with a rich blend of cheeses and savory seasonings, baked to golden perfection for a satisfying side or main course.

Ingredients

Vegetables

  • 1 clove of garlic, crushed
  • 12 ounce package of frozen broccoli florets (or 4 cups raw broccoli florets)
  • 2 cups fresh baby spinach, finely chopped

Dairy

  • 2 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1/2 cup sharp cheddar cheese, shredded
  • 3/4 cup mozzarella cheese, shredded

Seasonings

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a baking dish by spraying it with nonstick cooking spray to prevent sticking.
  2. Cook Broccoli: Cook the broccoli according to package instructions. If using fresh broccoli, microwave it for about 5 minutes until tender. Then chop the broccoli into small bite-sized pieces, whether fresh or frozen.
  3. Mix Ingredients: Drain the cooked broccoli and place it in a large mixing bowl. Add the softened cream cheese, mayonnaise, crushed garlic, shredded cheddar cheese, salt, black pepper, onion powder, and finely chopped fresh baby spinach. Mix everything well so that the hot broccoli melts the cheeses slightly and wilts the spinach.
  4. Assemble Casserole: Spread the broccoli and cheese mixture evenly in the prepared baking dish, smoothing the top.
  5. Bake: Sprinkle the shredded mozzarella cheese evenly over the top. Bake the casserole in the preheated oven for 30-35 minutes until the top is browned and bubbly.
  6. Serve and Store: Remove from oven and let cool slightly before serving. Store any leftovers in an airtight container in the refrigerator.

Notes

  • You can use fresh or frozen broccoli depending on availability.
  • Microwaving fresh broccoli is a quick way to soften it without boiling.
  • The casserole can be prepared ahead and refrigerated before baking.
  • To make it dairy-free or vegan, substitute cheeses and mayonnaise with plant-based alternatives.
  • Leftovers keep well in the refrigerator for up to 3 days.
