This Japanese Air Cheesecake is a light and fluffy no-bake dessert featuring a creamy cream cheese mixture whipped together with heavy cream to create a mousse-like texture. The recipe offers versatile serving options, including piping directly into cups, layering on cookie bases, or using a pre-made graham cracker crust, with optional toppings like fresh fruit, caramel, or chocolate sauce to suit any palate.

Ingredients

Cheesecake Mixture

  • 1/2 cup (125 g) full fat brick cream cheese, softened
  • 2 tbsp (25 g) powdered sugar (or granulated white sugar)
  • 1 cup (250 ml) heavy cream (35-37% fat)
  • 1 vanilla bean pod or 1 tsp vanilla bean paste (optional)

Crust Options

  • 80 g crushed Biscoff cookies + 20 g melted salted butter
  • 80 g crushed graham crackers + 12 g sugar + 20 g melted butter
  • Pre-made graham cracker crust

Toppings

  • Fresh fruit (berries, mango, banana, kiwi, peaches, etc.)
  • Caramel sauce
  • Chocolate sauce
  • Berry compote
  • Biscoff spread
  • Crushed Biscoff cookies
  • Lemon curd

Instructions

  1. Chill bowl and prepare cream cheese: Place the bowl intended for whipping cream in the fridge to chill for 15 minutes. Bring the cream cheese to room temperature until smooth and easy to work with.
  2. Beat cream cheese and sugar: In a medium mixing bowl, combine the softened cream cheese and powdered sugar. Using an electric hand mixer on medium speed, beat until completely smooth and creamy, about 1 minute. Add vanilla bean or vanilla bean paste here if using.
  3. Whip heavy cream: In a separate large mixing bowl, whip the heavy cream on medium-high speed until medium-stiff peaks form. The cream should hold its shape and barely curl when the beaters are lifted.
  4. Combine mixtures: Add a scoop of the whipped cream to the cream cheese mixture and mix until fully combined. Then fold the cream cheese mixture into the whipped cream using a scoop and toss motion to maintain the airy texture. Alternatively, you can use an electric mixer on medium speed, scraping the sides as needed.
  5. Pipe or spoon mixture: Transfer the cheesecake mixture into a piping bag and pipe into serving bowls, glasses, or dessert cups. Alternatively, spoon the mixture into individual serving dishes or spread evenly into a prepared pie crust.
  6. Chill or serve: Serve immediately for a soft, airy texture, or chill for 30 minutes to achieve a slightly firmer consistency.
  7. Add crust or toppings: For additional texture, pipe the mixture over cookies like Biscoff or graham crackers, or create a quick crust by combining crushed cookies with melted butter and placing it at the bottom of serving cups. For larger portions, fill a pre-made graham cracker pie crust and chill until ready to serve.
  8. Customize with toppings: Add fresh fruit, caramel sauce, chocolate sauce, berry compote, Biscoff spread, crushed cookies, or lemon curd just before serving to keep the cheesecake fresh and maintain its light texture.

Notes

  • Make sure the cream cheese is fully softened at room temperature for a smooth mixture.
  • Chilling the whipping bowl helps achieve better volume when whipping cream.
  • Folding the mixtures gently preserves the airy texture of the cheesecake.
  • Adding toppings just before serving maintains the lightness and visual appeal.
  • This cheesecake is best served within 1-2 days for optimal freshness.
  • Use full-fat cream cheese and heavy cream for the best structure and flavor.
