These no-bake Honey Oat Granola Bars are a delicious and wholesome snack option packed with rolled oats, almonds, and a touch of honey and brown sugar. Easy to prepare without eggs or baking, they are perfect for meal prepping and on-the-go energy boosts.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup whole almonds, chopped (optional)
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons ground flaxseed

Wet Ingredients

  • ¼ cup honey
  • ¼ cup dark brown sugar
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and toast: Preheat your oven to 350°F (175°C) and line a rimmed half baking sheet with parchment paper. Spread the rolled oats and chopped almonds in an even layer on the baking sheet. Bake them, stirring regularly, until they are lightly browned and have a toasty aroma, about 10-15 minutes.
  2. Prepare baking pan: Line an 8” x 8” baking pan with parchment paper to ensure easy removal of the granola bars after chilling.
  3. Make the syrup: While the oats and almonds are toasting, combine honey, dark brown sugar, and unsalted butter in a heavy-bottomed medium saucepan over medium heat. Stir continuously until the butter melts and the mixture is smooth.
  4. Add flavorings and mix: Remove the saucepan from heat and stir in the vanilla extract, cinnamon, and salt. Then fold in the toasted oats and almonds along with the ground flaxseed, making sure everything is evenly coated with the syrup.
  5. Press mixture and chill: Transfer the mixture into the prepared baking pan, spreading it evenly. Use a piece of parchment paper to press down the mixture firmly and evenly to the edges of the pan for compact bars.
  6. Chill and cut: Cover the pan with plastic wrap and refrigerate for at least 2 hours to allow the granola bars to set firmly. Once solidified, lift the mixture out of the pan using the parchment paper and cut into 12 bars with a sharp knife.

Notes

  • Toast the oats and almonds evenly to enhance their flavor and crunch.
  • Use a sharp knife when cutting to ensure clean, neat bars.
  • These bars can be stored in an airtight container in the refrigerator for up to one week.
  • For a nut-free version, omit almonds and increase oats or substitute with seeds.
  • The ground flaxseed helps bind the bars and adds nutritional benefits.
