These homemade sourdough pop tarts feature a flaky, tangy crust made with sourdough starter and are filled with your favorite jam for a delicious breakfast or snack. Lightly glazed with a sweet icing, they bake to golden perfection in just minutes, offering a delightful twist on a classic treat.

Ingredients

Dough

  • 1 cup all-purpose flour
  • 1/4 cup sourdough starter
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into cubes
  • 2-3 tablespoons cold water

Filling

  • Your favorite jam (jelly, or other filling)

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk

For Brushing

  • 1 beaten egg (for brushing tops before baking)

Instructions

  1. Make the Dough: In a bowl, combine the flour, sourdough starter, sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Gradually add 2 to 3 tablespoons of cold water to bring the dough together. Knead just briefly until smooth, then wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
  2. Roll Out and Fill: On a floured surface, roll the chilled dough out to about 1/8-inch thickness. Cut into squares of your desired size. Place a spoonful of your favorite jam filling on half of each square. Fold the dough over to cover the filling and seal the edges by pressing down with a fork to prevent leaking during baking.
  3. Bake: Preheat your oven to 400°F (200°C). Place the assembled pop tarts on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a glossy finish. Bake for 10 to 12 minutes or until the pop tarts are golden brown and cooked through.
  4. Make the Glaze: While the pop tarts cool, whisk together the powdered sugar and 2 to 3 tablespoons of milk until the glaze is smooth and slightly runny.
  5. Glaze and Serve: Drizzle the glaze over the cooled pop tarts. Allow the glaze to set slightly before serving for the best texture.

Notes

  • Ensure the butter is very cold to help create a flaky crust.
  • You can use any jam or jelly of your choice to customize the filling.
  • For a dairy-free option, substitute milk in the glaze with almond or oat milk.
  • Pop tarts are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
  • Reheat briefly in a toaster oven for a warm treat.
