This Homemade Nutella recipe is a simple, delicious spread made from roasted hazelnuts, cocoa powder, and a sweetener of your choice. It captures the rich, creamy texture and chocolatey flavor of the classic Nutella but with the benefit of customizing sweetness and ingredients. Perfect for spreading on toast, adding to desserts, or enjoying by the spoonful, this recipe produces about 2 servings in just 15 minutes.

Ingredients

Nutella Ingredients

  • 2 cups hazelnuts (240g)
  • 1/4 tsp vanilla bean paste
  • 1/4 cup cocoa powder
  • 1/3 cup sweetener of choice (such as sugar, honey, maple syrup, or a sugar substitute)
  • 1/4 tsp salt
  • 1/2 cup milk of choice or 2 tbsp oil (optional, to adjust consistency)

Instructions

  1. Roast the Hazelnuts: Preheat your oven to 400°F (204°C). Spread the hazelnuts in a single layer on a baking sheet and bake for 6-8 minutes until they begin to brown and smell fragrant. This enhances their flavor and makes it easier to remove the skins.
  2. Remove the Skins: After roasting, place the hazelnuts in a clean kitchen towel or paper towel and rub them vigorously to remove as much skin as possible. Don't worry if some skin remains; it won't affect the taste.
  3. Blend the Hazelnuts: Transfer the skinned hazelnuts to a Vitamix or a food processor. Blend them for several minutes until they turn into a smooth hazelnut butter. This can take up to 20 minutes in a food processor, with occasional scraping down of the sides to ensure even blending.
  4. Add Remaining Ingredients: Add the vanilla bean paste, cocoa powder, sweetener, and salt to the hazelnut butter. Continue blending until the mixture is smooth and creamy, resembling traditional Nutella.
  5. Adjust Consistency: If desired, add the milk or oil gradually and blend again until you reach the preferred spreadable consistency.
  6. Store and Serve: Transfer your homemade Nutella to a clean jar or container. Store it in the refrigerator for up to 2 weeks. Before use, bring it to room temperature or warm slightly if it becomes too firm.

Notes

  • Use a high-powered blender or food processor for best results in achieving smooth nut butter.
  • Roasting hazelnuts enhances flavor and makes skin easier to remove.
  • The sweetness level can be customized by choosing your preferred sweetener.
  • Adding milk or oil is optional and helps adjust thickness and creaminess.
  • Store in an airtight container in the fridge and allow to soften at room temperature before spreading.
