This High-Protein Dill Pickle Chicken Salad is a refreshing and tangy twist on classic chicken salad, featuring shredded rotisserie chicken combined with crunchy dill pickles, fresh celery, and aromatic dill. Creamy Greek yogurt and avocado oil mayonnaise blend with zesty lemon and flavorful mustard to create a light yet satisfying meal perfect for sandwiches, wraps, or salads.

Ingredients

Chicken Salad

  • 3 cups rotisserie chicken, shredded or chopped
  • ¾ cup roughly chopped dill pickles
  • ½ cup finely chopped celery
  • 1 bunch finely chopped dill (about 1/3 cup)

Dressing

  • ⅓ cup plain Greek yogurt
  • ⅓ cup mayonnaise (preferably avocado oil mayo)
  • 2 tbsp mustard (preferably 1 tbsp grainy, 1 tbsp Dijon)
  • 1 lemon, zest and juice
  • Salt, to taste

Instructions

  1. Prepare the Chicken: Finely shred or dice 3 cups of rotisserie chicken into bite-sized pieces, ensuring an even texture for the salad.
  2. Mix the Dressing: In a large bowl, combine ⅓ cup of plain Greek yogurt, ⅓ cup of mayonnaise, and 2 tablespoons of mustard. Add the zest and juice of 1 lemon, then whisk thoroughly to form a creamy, tangy dressing.
  3. Add Salad Ingredients: To the dressing, add ¾ cup of roughly chopped dill pickles, ½ cup of finely chopped celery, and 1 bunch of finely chopped dill. Mix everything until evenly combined and coated with the dressing.
  4. Season and Adjust: Taste the chicken salad and add salt as needed to enhance the flavors according to your preference.
  5. Chill Before Serving: Allow the salad to chill in the refrigerator for 15 minutes to let the flavors meld together before enjoying.

Notes

  • You can substitute mayo entirely with Greek yogurt or vice versa for a lighter or richer salad depending on dietary preferences, using a total of ⅔ cup whichever you choose.
  • Use freshly chopped dill for the best flavor; dried dill will not give the same vibrant taste.
  • This salad is perfect served on a sandwich, in a wrap, or over greens for a low-carb option.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
