This High Protein Cottage Cheese Giardiniera Dip is a creamy, tangy, and flavorful appetizer or snack that combines whipped low-fat cottage cheese with zesty garlic, lemon, and spicy Chicago-style giardiniera. It's perfect for dipping crackers, fresh vegetables, or spreading on toast, making it a versatile and protein-packed option for gatherings or everyday enjoyment.

Ingredients

For Whipped Cottage Cheese:

  • 1 (16 ounce) container low-fat cottage cheese (Good Culture recommended)
  • 1 garlic clove, sliced or roughly chopped
  • 1 small lemon, zested
  • ¾ cup Chicago-Style mild or hot giardiniera, drained but NOT rinsed

For Topping:

  • Extra ¼ cup giardiniera with oil (DO NOT drain the oil)
  • Optional: Fresh grated Parmesan cheese
  • Chopped fresh parsley or green onion

Instructions

  1. Blend Cottage Cheese Mixture: In the bowl of a food processor or high-powered blender, combine the low-fat cottage cheese, sliced garlic clove, and lemon zest. Blend on high for 30 seconds to 1 minute, using a blender tamper or spatula to scrape down the sides if necessary, ensuring a smooth and creamy texture.
  2. Add Giardiniera: Add the drained giardiniera (mild or hot, according to preference) to the blended mixture and continue blending for another 30 seconds until well combined, incorporating the flavors of the pickled vegetables and spices.
  3. Assemble and Garnish: Transfer the dip to a shallow serving bowl. Top with an additional ¼ cup of giardiniera including its oil for extra flavor and moisture. Garnish with chopped fresh parsley or green onion and sprinkle optional grated Parmesan cheese on top.
  4. Serve and Enjoy: Serve the dip with crackers such as Simple Mills or Triscuits, fresh cut vegetables, pita chips, or use it as a spread on toasted sourdough with fresh herbs. It also pairs wonderfully as a dip for quesadillas or as a flavorful accompaniment to roasted or grilled chicken or steak.

Notes

  • Do not rinse the giardiniera after draining to retain its flavor and seasoning.
  • Use fresh lemon zest for the brightest citrus aroma.
  • Optional Parmesan cheese adds a nice salty, umami topping but can be omitted for a lighter dip.
  • For a spicier version, use hot giardiniera instead of mild.
  • This dip can be stored covered in the refrigerator for up to 3 days.
  • Serve chilled or at room temperature for best flavor.
