Ingredients

Egg Mixture

  • 12 eggs
  • 3/4 cup cottage cheese
  • 1/2 teaspoon salt
  • Pinch of pepper

Sausage and Vegetables

  • 1 pound turkey or chicken breakfast sausage
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1/2 onion, chopped
  • 2 cups fresh spinach
  • 1 1/2 cups frozen diced potatoes
  • 1 cup black beans

Assembly

  • 8 burrito-sized tortillas
  • 1 cup shredded cheddar cheese
  • Chopped cilantro, for garnish
  • Salsa, for serving
  • Guacamole, for serving
  • Sour cream, for serving

Instructions

  1. Prepare Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, salt, and pepper until fully combined. Set this mixture aside for cooking later.
  2. Cook Sausage: Heat a large skillet over medium heat and sauté the turkey or chicken breakfast sausage until it is fully cooked through. Once cooked, transfer the sausage to a plate and set aside.
  3. Sauté Vegetables: Using the same skillet, heat the olive oil over medium heat. Add the chopped bell pepper and onion, sprinkle with a bit of salt, and cook for 4 to 5 minutes until they soften and become fragrant.
  4. Add Potatoes and Spinach: Stir in the frozen diced potatoes and cook for a couple more minutes until heated through. Then add the fresh spinach and continue cooking until it wilts. Finally, stir in the black beans to combine all ingredients.
  5. Scramble Eggs with Veggies: Pour the egg and cottage cheese mixture into the skillet containing the cooked vegetables. Gently scramble everything together over medium heat until the eggs are fully cooked but still tender.
  6. Assemble Burritos: Lay out the burrito-sized tortillas on a flat surface. Spoon equal portions of the scrambled egg and vegetable mixture along with the cooked sausage onto the center of each tortilla. Sprinkle shredded cheddar cheese over the fillings.
  7. Roll Burritos: Fold the bottom half of each tortilla over the filling, then fold in the sides towards the center, and tightly roll up the tortilla to form a burrito.
  8. Optional Browning: For a crispy finish, heat a small amount of oil in a skillet over medium heat. Place 1 or 2 burritos seam-side down in the skillet and cook for a couple of minutes on each side until the tortillas are golden brown and slightly crisp.
  9. Serve and Garnish: Serve the burritos warm, topped with chopped cilantro and accompanied by salsa, guacamole, and sour cream for added flavor and creaminess.

Notes

  • You can substitute ground chicken for turkey sausage if preferred.
  • Frozen diced potatoes can be replaced with freshly diced and pre-cooked potatoes.
  • For a vegetarian version, omit the sausage and add extra beans or tofu.
  • If you want a spicier burrito, add diced jalapeños to the vegetable mix or salsa.
  • Leftover burritos can be wrapped in foil and refrigerated for up to 3 days, and reheated in a skillet or microwave.
