  • 15 ounces pinto beans, drained and rinsed
  • 13.5 ounces unsweetened coconut milk (canned, full-fat)
  • ½ to 1.5 cup chicken broth (adjust based on desired thickness)
  • 1 cup frozen corn

Instructions

  1. Sauté the onion: Warm the olive oil in a soup pot over medium heat. Add the diced onion and cook for 2 to 3 minutes until it softens and becomes translucent.
  2. Add spices and garlic: Stir in the minced garlic, ground cumin, dried oregano, chili powder, ground cinnamon, and salt. Cook for 30 to 60 seconds until the mixture becomes fragrant, releasing the spices’ aroma.
  3. Sear the chicken: Place the boneless skinless chicken thighs into the pot and sear them for about 2 minutes on each side until they develop a light brown color, but are not fully cooked through.
  4. Add main soup ingredients: Add the canned mild diced green chiles, pumpkin puree, pinto beans, unsweetened coconut milk, and chicken broth to the pot. For a thicker soup reminiscent of chili, use only ½ cup of broth, adding more as needed to reach your preferred consistency.
  5. Simmer the soup: Increase the heat to bring the mixture to a boil, then reduce the heat to maintain a gentle simmer. Cover the pot and cook for 15 to 20 minutes, stirring occasionally, until the chicken is fully cooked and reaches an internal temperature of at least 165℉ (74℃).
  6. Add corn and shred chicken: Stir in the frozen corn. Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot and cook for a few more minutes until the corn is warmed through and the flavors meld.
  7. Serve and garnish: Remove the soup from the heat. Ladle it into bowls and top with your choice of cilantro, lime juice, coconut yogurt, and/or crunchy tortilla strips for added flavor and texture. Enjoy while warm.
