These Healthy Banana Oatmeal Pancakes are a nutritious and delicious breakfast option made effortlessly in a blender. Combining ripe bananas, oats, and simple ingredients, these pancakes are naturally sweet, gluten-free, and perfect for a wholesome start to your day.

Ingredients

Wet Ingredients

  • 2 medium ripe bananas (best when they have lots of brown spots)
  • 2 eggs
  • ½ cup (120g) unsweetened almond milk
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups (143g) old fashioned rolled oats, gluten free if desired
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

For Cooking

  • Olive oil, for cooking

Instructions

  1. Blend Ingredients: Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up.
  2. Heat Pan: Lightly coat a griddle or skillet with olive oil (or coconut oil or vegan butter) and place over medium heat. Allow the pan to become hot before adding batter.
  3. Cook Pancakes: Pour 1/3 cup of the batter onto the hot griddle for each pancake. Cook for 2-4 minutes until pancakes puff up slightly and bubbles appear along the edges.
  4. Flip Pancakes: Carefully flip the pancakes and cook until the underside is golden brown. If pancakes brown too quickly, reduce the heat to medium-low. Avoid overheating to prevent burning or smoking.
  5. Repeat: Wipe the skillet clean if needed, add more oil, and repeat with the remaining batter until all pancakes are cooked.

Notes

  • Use ripe bananas for natural sweetness and better texture.
  • If you prefer vegan pancakes, substitute eggs with flax eggs or another egg replacement and use vegan butter or oil for cooking.
  • The batter resting while the pan heats helps achieve better texture.
  • Adjust cooking heat as needed to avoid burning the pancakes.
  • These pancakes are naturally gluten-free if you use certified gluten-free oats.
