This Healthy Apple Pie Granola is a delicious and nutritious homemade granola that captures the warm flavors of apple pie in a crunchy, wholesome breakfast or snack option. Featuring rolled oats, chopped walnuts, and fresh diced apples, it's naturally sweetened with maple syrup and infused with cinnamon and vanilla for a comforting and satisfying treat. Baked to perfection, this granola is perfect for enjoying with yogurt, milk, or on its own as a crunchy snack.

Ingredients

Dry Ingredients

  • 2 ½ cups old fashion rolled oats (gluten-free if needed)
  • ½ cup walnuts, chopped
  • 1 ½ tsp ground cinnamon
  • ¼ tsp salt
  • ⅔ cup red apple (about 1 medium Honeycrisp apple), peeled, cored, and cut into ¼ inch cubes

Wet Ingredients

  • ⅓ cup melted coconut oil
  • ¼ cup real maple syrup (or honey)
  • 1 tsp vanilla flavoring

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the rolled oats, chopped walnuts, ground cinnamon, salt, and cubed apples. Pour in the melted coconut oil, maple syrup or honey, and vanilla extract. Stir everything thoroughly until all the oats and ingredients are evenly coated with the wet mixture.
  3. Spread Granola: Evenly spread the granola mixture onto the prepared baking sheet, pressing down with a spatula. Pressing the granola in a thin and even layer helps create a crunchier texture.
  4. Bake Granola: Bake in the preheated oven for 22 to 28 minutes. Halfway through baking, stir the granola for even toasting. For chunkier clusters, press the granola back down after stirring before continuing to bake. Note that the granola may appear slightly underbaked when removed but will crisp up as it cools.
  5. Cool and Store: Let the granola cool completely on the baking sheet, undisturbed, for at least 20 minutes. Once cooled, break apart into clusters. Store granola in an airtight container at room temperature for up to 1 week, or in a sealed freezer-safe bag for up to 3 months to maintain freshness.

Notes

  • Using a thin layer when spreading the granola ensures maximum crunchiness.
  • For chunkier granola clusters, press the mixture down firmly after stirring halfway through baking.
  • Maple syrup can be substituted with honey for similar sweetness and texture.
  • Ensure granola is completely cooled before storing to prevent sogginess.
  • Use gluten-free oats if you require a gluten-free version.
  • Store in airtight containers to preserve freshness and crunch.
