Ingredients

Cilantro Yogurt Sauce

  • ¾ cup plain Greek yogurt
  • ¼ avocado (use the rest for topping)
  • ½ cup fresh cilantro
  • 1 small clove garlic
  • ½ to 1 jalapeno pepper (cored and chopped)
  • ½ teaspoon fine sea salt

Halloumi and Hot Honey Glaze

  • 1 tablespoon extra virgin olive oil
  • 8.8 oz sliced Halloumi cheese (¼-inch/0.5cm thick slices)
  • 2 tablespoons honey
  • 1 teaspoon Mexican-style hot sauce
  • 1 tablespoon fresh lime juice

Assembling the Wraps

  • 4 (10 to 12-inch) flour wraps
  • vegetable toppings such as sliced avocado, cucumber, tomatoes, lettuce

Instructions

  1. Make Cilantro Yogurt Sauce: Add ¾ cup plain Greek yogurt, ¼ avocado, ½ cup fresh cilantro, 1 small clove garlic, ½ to 1 jalapeno pepper (cored and chopped), and ½ teaspoon fine sea salt to a food processor or blender. Blend until smooth and creamy. Set this cilantro yogurt sauce aside for assembling the wraps.
  2. Sear Halloumi: Heat 1 tablespoon extra virgin olive oil in a large nonstick skillet over medium heat. Arrange the sliced Halloumi cheese in a single layer in the pan. Cook for about 2 minutes per side until the halloumi is golden brown and crisp on the outside.
  3. Prepare Hot Honey Glaze and Finish Halloumi: While the halloumi cooks, mix 2 tablespoons honey with 1 teaspoon Mexican-style hot sauce in a small bowl. Once halloumi is seared, reduce the skillet heat to low. Drizzle the hot honey mixture over the halloumi, toss gently to coat, and cook for 1-2 minutes until the honey is bubbling and coats the cheese. Stir in 1 tablespoon fresh lime juice and toss again to evenly coat both sides. Remove the skillet from heat.
  4. Assemble Wraps: Spread some of the cilantro yogurt sauce evenly over each of the 4 flour wraps. Slice the remaining avocado (the leftover quarter) for toppings. Scatter sliced avocado and your choice of fresh vegetable toppings such as cucumber, tomatoes, and lettuce on the wraps. Top with the hot honey coated halloumi slices. Drizzle additional cilantro yogurt sauce over the top, then roll each wrap tightly to enclose the fillings.

Notes

  • Use ripe but firm avocado to get creamy texture without overpowering the sauce.
  • Mexican-style hot sauce adds a smoky heat, but you can adjust to taste or substitute with your favorite hot sauce.
  • Choose fresh, soft flour wraps for easy rolling and a tender bite.
  • Halloumi can be found in specialty cheese sections or Mediterranean markets.
  • Jalapeno heat can be adjusted by using less or more depending on your spice preference.
