Ingredients

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 2-3 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha (more to kick up the spice)
  • 1 tsp rice vinegar
  • 2 tsp honey

To Serve

  • Cooked rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the spice or sweetness by adding more sriracha or honey to taste. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once shimmering, add the ground turkey, breaking it into smaller pieces with a spatula. Cook until browned and the internal temperature reaches 165°F.
  3. Add Flavorings and Simmer: Reduce heat to medium-low and stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let the mixture simmer for 2-3 minutes, stirring occasionally to combine the flavors.
  4. Thicken the Meat Mixture: Sprinkle corn starch over the turkey mixture and stir well to thicken the sauce. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the meat for extra flavor.
  5. Assemble Bowls: To serve, layer a base of cooked rice in bowls. Top with the ground turkey mixture and arrange shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and other favorite toppings. Drizzle additional bang bang sauce over the bowl and garnish with sliced green onions and sesame seeds.

Notes

  • Adjust the spiciness of the bang bang sauce by varying the amount of sriracha according to your heat preference.
  • Use low sodium soy sauce to better control the saltiness of the dish.
  • Feel free to customize the veggies based on what you have available or prefer for your rice bowl.
  • The corn starch helps thicken the turkey mixture; ensure it’s well mixed to avoid lumps.
  • Ground chicken or pork can be used as an alternative to ground turkey.
  • Cook rice according to package instructions ahead of time to speed up assembly.
