A hearty and flavorful ground beef and potatoes skillet recipe that combines tender, seasoned potatoes with savory 90% lean ground beef and aromatic spices. Perfect for a quick and satisfying dinner, this dish is cooked entirely on the stovetop and can be served over rice or in tortillas, topped with your favorite garnishes.

Ingredients

Potatoes

  • 1 pound potatoes (yellow or white), peeled and cut into ¼’’ cubes
  • 1 tablespoon canola oil

Beef Mixture

  • 1 pound 90% lean ground beef
  • 1 small yellow onion, diced
  • 2-3 cloves garlic, minced
  • 1 red or green bell pepper, diced
  • 1 jalapeno, minced (remove seeds for less spice)
  • 1 tablespoon Worcestershire sauce

Spices and Herbs

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • Fresh black pepper, to taste
  • ¼ cup chopped fresh cilantro

Instructions

  1. Make potatoes: Peel and rinse the potatoes, then cut them into small ¼’’ cubes. Heat the canola oil in a large heavy-duty pan or skillet over medium-high heat. Once hot, add the potatoes and cook for 4-5 minutes, stirring occasionally, until the potatoes are golden and nearly softened on the inside. Remove the potatoes from the pan and set aside.
  2. Cook beef: Using the same skillet, add the ground beef, diced onion, and minced garlic. Cook for 3-4 minutes, breaking apart the meat with a spatula until the beef turns brown. Add the diced bell pepper, minced jalapeno, Worcestershire sauce, and all the spices (garlic powder, smoked paprika, cumin, oregano, salt) along with freshly ground black pepper. Continue cooking and stirring for another 3-4 minutes until the bell pepper softens.
  3. Mix: Return the partially cooked potatoes to the skillet with the beef mixture. Sprinkle the chopped fresh cilantro on top and stir everything together thoroughly. Cook for an additional minute to ensure the potatoes and beef are fully cooked through.
  4. Assemble and serve: Serve the ground beef and potatoes mixture immediately over rice or wrapped in warm tortillas. Optionally, top with sour cream, shredded cheddar cheese, and extra chopped cilantro for added flavor and creaminess.

Notes

  • This recipe uses 90% lean ground beef for a balance of flavor and lower fat content.
  • Adjust jalapeno quantity and remove seeds to control the heat level.
  • For a gluten-free option, ensure the Worcestershire sauce used is gluten-free.
  • Potatoes can be parboiled if you want to reduce skillet cooking time, but this step is optional.
  • Leftovers store well in the refrigerator for up to 3 days and reheat easily in a pan.
  • Try adding other vegetables like corn or diced tomatoes for variation.
